MOTHER'S EVERYDAY PIMENTO CHEESE

Steps:
- Finely grate cheeses into a large bowl. Stir in pimentos, black pepper, cayenne, and salt to taste with a fork. Then stir in mayonnaise, mashing mixture with fork until relatively smooth. (It should be flecked with small pieces of pimento.)
- Scrape spread into a crock or jar and chill, covered, at least 2 hours to allow flavors to develop.
- Serve pimento cheese with crackers or use as a filling for finger sandwiches.
PIMIENTO CHEESE
Combined with breadsticks or carrot sticks, this tangy cheese spread makes a satisfying afterschool snack. Pimientos are large, sweet red peppers that are usually sold in jars.

- In a food processor, pulse reduced-fat mayonnaise with reduced-fat cream cheese and chopped pimientos (well drained) until combined.
- Using a flexible spatula, scrape down sides of bowl. Add cheddar cheese; season with coarse salt and ground pepper. Pulse until spreadable and slightly chunky.
PIMIENTO MAC AND CHEESE
Classic mac and cheese gets a touch of Southern charm when the flavors inspired by pimiento cheese are added. Flecks of roasted bell pepper, a little mustard powder and cayenne for zip, and a good amount of sharp cheddar cheese made up the flavor base. And since this mac and cheese is baked in the oven, adding eggs, sour cream, and a little grated onion ensure there will be no dry scoops on plates come dinnertime.

- Preheat oven to 350°F. Generously brush a 2 1/2-to-3-quart baking dish with butter. Char red pepper over a gas flame on high (or, if you don't have a gas stove, on a rimmed baking sheet directly under the broiler) until blackened all over, 6 to 8 minutes.
- Transfer peppers to a bowl; cover with plastic wrap and let stand 10 minutes. Rub charred skin with a paper towel to remove. Peel, seed, and stem pepper, then cut into 1/2-inch pieces.
- Cook macaroni in a pot of generously salted boiling water until al dente, about 2 minutes less than package instructions. Drain well; transfer to prepared baking dish. Mix in cubed cheese and 1/2 cup roasted red pepper (reserve remainder for another use).
- In a large bowl, whisk together flour, 1 1/2 teaspoons salt, mustard, cayenne, and nutmeg. Whisk in sour cream and eggs until smooth, then onion, half and half, cream, and Worcestershire until thoroughly combined. Pour over macaroni mixture; gently shake dish to blend. Sprinkle grated cheese evenly over top.
- Bake until set around edges but still loose in center, 25 to 30 minutes (do not overbake; mixture will continue setting as it cools). Let cool on a wire rack until set but still warm, 10 to 20 minutes. Serve.
NANA'S PIMENTO CHEESE
Nana is DH's mother...and I can't get enough of her pimento cheese. The optionals are the stuff that I add when I want to dress her's up..but for the kids, just the way she makes it is wonderful. We serve it with ritz crackers and celery. We prefer to use the Vermont or Kraft brand of cheese. We like to eat it warm too cause it is more spreadable and who wants to wait till it's cool?

- In a large bowl, mix grated cheeses and whole bottle of pimentos and liquids. Mix gently. Add block of SOFTENED cream cheese, 1 TB of mayo and 1 TB HOT apple cider vinegar(this helps soften the mix farther for easier mixing). If you need more liquid, add more HOT apple cider vinegar.
- I use all the optionals at one time and I love it. Experiment and see how you like it.
- Serve on crackers and cleaned celery stalks topped with sliced green olive.
- Also, try wrapping a piece of melon (like cantelope) and a dollop of pimento cheese in a piece of ham. Yum!

MOM'S PIMENTO CHEESE
Posted in response to a request, this has to be the best pimento cheese ever, imho. My kids loved it growing up and if, when they visit, there is some in the frig... it's not there long. Great on a sandwich or crackers... or to stuff celery or use as a veggie dip. It never lasts long around here. (Amount is a guess-timate b/c I've never measured how much this recipe makes.)
