ARROZ DOCE (PORTUGUESE SWEET RICE)
This was always a family staple and while searching the Portuguese recipes, I noticed it wasn't there and I just have to add it.

Steps:
- Bring water to a boil in medium saucepan.
- Add rice and cover, simmering for 20 minutes.
- Add milk, sugar and lemon rind, stirring constantly until thickened to oatmeal consistency, about 15-20 minutes.
- It will also thicken some while cooling.
- Pour into one large serving plate and remove lemon rind.
- Spread flat and allow to cool on wire rack.
- You can be decorative with cinnamon by pinching a bit between your fingers and place while your hand is no more than an inch away from the rice (criss cross patterns are traditional), or you can just dust the entire top with the cinnamon.
- Serve at room temp, but refrigerate uneaten portion.

- In a 4-quart medium saucepan heat the oil over high heat until hot. Add the onion and cook, stirring, until softened, 4 minutes. Add the garlic, salt, red pepper, and bay leaf and cook, stirring, for 1 minute. Add the tomatoes and cook, stirring occasionally, until they begin to soften, about 2 minutes. Add the water, parsley and cilantro and bring to a boil. Add the rice and stir well. When the liquid returns to a boil, stir again, then cover the pot and reduce the heat to low. Cook the rice undisturbed for 20 minutes, or until the liquid is dissolved and the rice is tender.
- Let rice stand for 5 minutes undisturbed before fluffing with a fork. Serve immediately.
PORTUGUESE SWEET RICE
My mom would always make this delicious, creamy rice pudding when we were kids. If a thicker rice is desired, increase rice to 1 1/4 cups and add another egg. Sprinkle with cinnamon.

- In a large saucepan over high heat combine sugar and milk. When bubbles form at the edges, stir in rice and reduce heat to medium-low. Cook 60 minutes, stirring often, until rice is tender. Do not allow to boil.
- Remove from heat and vigorously stir in beaten eggs, a little at a time, until well incorporated. Serve warm.

PORTUGUESE SWEET RICE (ARROZ DOCE)
Sweet Rice is as individual as the cooks who make them. I've tasted sweet rice by different cooks, but I've never tried one that came close to the creamyness, and sweet, lemony flavour of my grandma's rice. This is her recipe. It takes about 30-45 minutes to make, but the results are well worth it.

Steps:
- Turn stove to maximum. In a large pot add water. Peel most of the rind from one lemon and add the peels to the pot. Set lemon aside and turn stove down to medium.
- Add salt and margarine.
- When water is boiling, add rice. Stir constantly.
- When most of the liquid boils away, add 1/2 cup of milk. Stir. Repeat this step until all the milk is added.
- Remove rind from pot.
- Grate the rest of the lemon zest and add it. Add sugar. Remove pot from element.
- Slowly stir in egg yolks. (add a little bit of milk to the yolks first).
- Return pot to the element just until the rice boils. Stir constantly to avoid burning!
- Pour into casserole dish and allow to cool slightly before covering.
- Just before serving, sprinkle cinnamon on top.
- Tip: for a stronger lemon flavour, use two lemons. Peel most of the rind from one for the cooking process, and grate most of the zest from a second lemon to add at the end. For a weaker flavour, use only one lemon and make it stretch for both.
SALADA DE ARROZ (RICE SALAD) - PORTUGUESE BRAZIL
This is from "Cuisines of Portuguese Encounters", where the author put together the dishes she encountered while going through the Portugal and its former colonies. I haven't made it yet. Times don't include the 2-hour chillng time, nor the time to precook a few ingredients.

- Place rice in large bowl. Add apple, avocado, pimiento and peas.
- In a smaller bowl, mix lemon jjuice, vinegar, olive oil, mustard, salt and pepper. Add it to the rice mixture. Mix well. Pack into a mold. Chill at least 2 hours.
- Arrange lettuce on a platter, and unmold rice on top. Decorate it with the sliced hard-boiled eggs and shrimp.
MOUNTAIN RICE (ARROZ DA SERRA) - PORTUGUESE BRAZIL
This is from "Cuisines of Portguguese Encounters", which as recipes from the author's travels thru Portugal and its former colonies. This dish was made by Portuguese settlers combining their foods with the customs of the Tupi-Guarani Indians It's now part of Brazil's national cuisine. I haven't made it yet.

- Bring 4 cups of water to a boil. Add rice, stir, cover, reduce heat and simmer for 20 minutes.
- Meanwhile, saute the beef until it's not pink. Set aside.
- Peel bananas and slice 1/2-inch thick. Heat oil in a large skillet and brown them quickly on each side. Remove and drain on paper towels.
- Heat oven to 350. Butter a 2-qt. casserole and layer the ingredients. Start with the rice, then beef, slices of cheese and banana slices. Continue layering, ending with bananas. Bake for 15 minutes or till cheese is melted.
- Serve warm.

This is the easiest and tastiest rice. This is the rice that is served at Portuguese weddings. You can add shrimp to it if you like.

- Add oil and garlic to large skillet over med heat.
- Cook until garlic soft.
- Add tomato paste. Cook for about 3 minutes.
- Add paprika, salt, pepper, hot peppers and rice.
- Cook for about 5 minutes until rice becomes translucent.
- Add boiling water and stir for a few minutes.
- Transfer skillet to over for about 30 minutes until rice is cooked.
- Enjoy.

ARROZ FRITO PORTUGUESA (FRIED RICE)
At first glance, the fried rice of Macao looks like the ordinary Chinese variety. But Macanese cooks flavor it with the saffron, tomatoes and olive oil of Portugal. The rich amalgam of flavors can be traced to the travels of the spice traders during the late-15th and early-16th centuries.

- Powder the saffron in a small bowl using your finger tips. Stir in one tablespoon of water and set aside.
- In a wok or a large saute pan, heat one tablespoon of the oil and add the beaten egg. Immediately tilt the pan, spreading the egg to coat the bottom of the wok. As soon as the egg sets, turn off the heat. Scrape the omelet into a bowl, breaking into pieces.
- Add the remaining oil to the wok over high heat. Add the ginger, sizzle for 15 seconds, then add the tomatoes and saffron water. Cook, stirring constantly, until the contents turn thick and glazed (about four minutes). Add the onions and cook an additional minute. Fold in the rice, salt, pepper and oyster or soy sauce. Cook until the contents are heated through (about two minutes). Stir in the peas and egg pieces, tossing for about 30 seconds. Add the scallions and serve immediately.
