MRS. GERALDINE'S GROUND BEEF CASSEROLE

This recipe came from a local church fund raising cook book. Mrs. Geraldine is a good friend of the family. She reminds me so much of Mrs. Clause, that I can't help but smile every time I think of her. This recipe freezes well. Do not bake before freezing. Just put it together, freeze it, thaw it and cook.

Mrs. Geraldine's Ground Beef Casserole image

Steps:

  • Brown meat in large skillet or Dutch oven.
  • Add onions, pepper and celery and simmer for 15 minutes.
  • Add tomatoes and tomato sauce, mushrooms, brown sugar and Worcestershire sauce.
  • Add salt and pepper to taste.
  • Cook in skillet for 1 hour.
  • Place cooked pasta in bottom of large casserole dish.
  • Spoon mushroom soup over pasta.
  • Pour sauce over the soup and top with cheese.
  • Bake in 350°F oven for 30-45 minutes.
  • Can sizes do not have to be exact, just as long as they are within a close range, everything will work out.

1 lb ground beef
1 (15 ounce) can tomatoes
1/4 cup chopped onion
1/4 cup chopped bell pepper
1/4 cup chopped celery
1 (8 ounce) can mushrooms
2 tablespoons brown sugar or 2 tablespoons sweet pickle juice
2 tablespoons Worcestershire sauce
1 (10 3/4 ounce) can cream of mushroom soup
1/4 lb sharp cheddar cheese
1 (6 ounce) package angel hair pasta, cooked, this is an estimated size bag- the original recipe called for 1 small bag
1 (8 ounce) can tomato sauce
salt and pepper

MRS. CLAUS'S CASSEROLE

I found this recipe in a magazine some 20 yrs ago. It is a delicious, hearty meal for a cold winter's night. I reduce the fat content by using a non-stick pan and pouring off half of the bacon fat. It is easy to stretch the recipe by adding more potatoes and carrots. I use a 4 qt. "everything" pan with a non-stick finish. From Hillshire Farm Smoked Sausage and Polish Kielbasa. I add 1 clove of minced garlic, for a little extra kick. I leave out the celery, that's my preference. My family likes it with a dollop of Dijon mustard on the side. I also cook the broccoli on the side.

Steps:

  • In a large heavy skillet, fry the bacon until crisp. Remove bacon. Blot the bacon with a paper towel and set aside. (This is where I drain off half the bacon fat.)
  • Add the potatoes, celery, onion and carrots to the bacon fat in the pan. Stir to coat with the bacon fat. Fry over medium heat. Add 1 clove of garlic, minced. Sprinkle with salt and pepper to taste. Stir occasionally. The original recipe says to fry uncovered. I use a lid, because it cooks faster and comes out softer.
  • When the vegetables are tender, place the broccoli and sausage on top. Cover and heat for 12-15 minutes until thoroughly heated. The broccoli will steam with the sausage. Crumble the cooked bacon on top before serving.

MRS. B'S PINEAPPLE CASSEROLE

My sister-in-law's mom, Evelyn Brandenberger, whom I always called "Mrs. B", made this every Thanksgiving. It is simply delicious! And it's very easy too! Now that she has graduated to Heaven, her daughters & granddaughters are making sure the tradition continues.

  • Preheat oven to 325 degrees
  • Spray a 1 1/2 quart casserole lightly with non-stick spray
  • In a large bowl, cream together butter and sugar
  • Add eggs and beat
  • Add other ingredients. Mix well
  • Pour into casserole dish and bake for 40 to 50 minutes

Steps:

  • Heat oven to 400°F. Combine crab meat, shrimp, mayonnaise, green pepper, onion, celery, salt, and Worcestershire. Pour into a buttered 2-1/2 quart casserole. Top with crushed potato chips. Sprinkle with paprika. Bake 20 to 25 minutes, until mixture is thoroughly heated.

Steps:

  • Saute ground meat with the peppers, onion, garlic and salt & pepper with olive oil or butter till red disappears in the meat.
  • Lightly butter medium casserole dish and start to layer with macaroni, then the meat mixture, cheese and then the soup mixture. Do this till you reach the top and cover, ending with the soup mixture.
  • Bake at 325 degrees F for 45 minutes.
