HOMEMADE FALAFEL RECIPE BY TASTY
Whether you're trying to cut back on meat or just looking for something different to make for dinner, homemade falafel is the solution. This classic Middle Eastern dish is actually surprisingly easy to make at home. You can even prepare the chickpea mixture ahead of time, refrigerate it overnight, and then cook the falafel balls when you're ready to eat. Toss them in pita bread or on top of salad for a feel-good meal you'll want to make over and over again.

Steps:
- To the bowl of a 2-quart (2 liter) food processor, add the chickpeas, onion, parsley, garlic, lemon juice, and spices. Pulse the ingredients together until just incorporated and they form a wet paste. Be careful not to overblend.
- Transfer the chickpea mixture to a large bowl and add the bread crumbs, mixing until just incorporated. Cover with plastic wrap and refrigerate for 1-2 hours, or overnight.
- Remove the chilled falafel mixture from the refrigerator and shape into 1-inch balls. The mixture should yield 18-20 balls.
- In a large frying pan with high sides, heat about 1 inch (2.5 cm) of oil to 350˚F (180˚C). Fry the falafel balls in batches of 6 for 3 minutes, flipping halfway. Once they are golden brown and crispy, transfer them to a paper towel-lined plate and sprinkle with salt.
- Serve the falafel as desired, either as a sandwich, salad topping, or over a bed of greens with a side of tahini sauce.

MRS FALAFEL'S SATAY PATE
This comes from the newsgroup alt.food.vegan. Mr Falafel posts the most amazing recipes and the best of all originate with his wife. I'm posting this one on Zaar because I want to try it for myself and I don't want to lose the recipe. This WILL be made in the future. Use it as pate, or as part of a filling in a tortilla...It is one of those very adaptable recipes.

- Combine garbanzo beans, parsley, cilantro, onion, garlic, eggs, jalapeno, flour, olive oil, cumin, coriander, baking soda, and salt in the bowl of a food processor; process until mixture is coarsely pureed. Transfer falafel mixture to the refrigerator for 30 minutes to 8 hours.
- Preheat the oven to 400 degrees F (200 degrees C).
- Remove falafel mixture from the refrigerator. Add more flour if needed, 1 tablespoon at a time, and form into 20 small patties. Place patties on a baking sheet.
- Cook in the preheated oven until patties are golden brown and feel dry to the touch, but still give a little when you press the middle, about 25 minutes.

- Begin by soaking the chickpeas: Put the chickpeas in a large bowl and cover with water by about 4 inches. Soak for 24 hours, adding more water if necessary to keep the chickpeas covered, as they will double in size. (Alternatively, if you're short on time, you can use the quick-soak method: place the beans in a pot and cover with water by about three inches; bring to a rolling boil and boil for five minutes, then remove the pan from the heat and let stand for one hour.)
- Drain the chickpeas and place in the bowl of a food processor fitted with the steel blade. Add all of the other ingredients except for the oil and process until the chickpeas are finely minced, scraping down the sides of the bowl as necessary, 1 to 2 minutes. The mixture shouldn't be completely uniform -- you want a slightly nubby texture -- but you'll need to process it enough so that it is moistened and binds together.
- Form heaping tablespoonfuls of the mixture into patties about 1/2 inch thick and 1-1/2 inches wide.
- Heat 1/4-inch of oil in a large nonstick sauté pan over medium heat. When the oil is hot and shimmering, add half of the falafel to the pan (the falafel should sizzle immediately when you drop it in the oil; if it doesn't, wait another minute or two for the oil to heat up.) When the first side is golden, flip and cook a few minutes more until golden all over. The total cook time should be 3 to 5 minutes. Using a slotted spoon, transfer the falafel to a paper towel-lined plate to drain. Cook the second batch, then serve warm or room temperature with tahini sauce or yogurt sauce.
