This frosty fellow is always welcome at a winter gathering, according to Susan Seymour of Valatie, New York. He's very tasty, too--and gets a little zip from horseradish and garlic.

- In a large bowl, beat the cream cheese until smooth. Stir in the dried beef, onions, horseradish and garlic powder until blended. Shape into two balls, one slightly larger than the other. Roll each in parsley. Cover and refrigerate 8 hours or overnight., On a serving plate, place the smaller cheese ball on top of larger cheese ball, forming a snowman. Set aside 1 teaspoon spreadable cream cheese. Carefully cover snowman with remaining spreadable cream cheese. , Arrange cranberries for eyes and buttons. Insert carrot for nose and pretzel sticks for arms., Place a small dab of reserved cream cheese on top of large cracker. Top with a butter-flavored cracker. Repeat with three remaining butter-flavored crackers. Place on top of snowman. Serve with crackers.

- In a large bowl, with an electric mixer, beat cream cheese with cheddar, mustard, Worcestershire sauce, and a generous pinch of pepper until well combined. Mix in 1/4 cup pecans. Cover cheese mixture with plastic wrap, and chill at least 2 1/2 hours or up to overnight.
- Divide the cheese mixture in half, and shape each half into a ball. Spread remaining 3/4 cup pecans on a plate, and roll balls in pecans to coat completely, pressing nuts to adhere. Serve chilled.
CHEESE BALL I
This is a wonderful cheese ball. It is very easy to make and simply delicious. Whenever I make it for gatherings or work it always gets great reviews. Serve with an assortment of crackers.

- Mix 3 packages cream cheese and the Cheddar cheese; divide into 3 equal parts. Combine 2 parts to equal two-thirds of mixture; mix in pesto. Mix onion, mustard and pepper sauce into remaining one-third mixture.

FLAYED MAN CHEESE BALL
This is a cheese ball cleverly disguised as a skinned human face. So gross and yet SOOOooo good! Arrange crackers, pretzels, or any snacks you want around the face and serve with a knife!

- Lightly coat plastic face mask with cooking spray (see Cook's Notes). Line the face mask with plastic wrap, taking care to press it down fully into the nose and eyes.
- Reserve two or three slices of prosciutto and set aside. Tear the remaining slices of prosciutto into strips and lay them into the mask to form the "muscle tissue." Start around the eyes, leaving eyes blank, and then create the cheeks, chin, and forehead.
- Take the two whole green olives and position them in the eye holes, pimento side-down. Set the mask aside.
- Combine the softened cream cheese, Cheddar, and Havarti cheeses in a mixing bowl. Add the chopped green olives and roasted red peppers. Use an electric mixer or clean hands to mix until thoroughly combined.
- Take a heaping spoonful of the cheese mixture and arrange it to form an eye around one olive, and then the other. Gently lay handfuls of the cheese mixture all around the mask, taking care not to move the slices of prosciutto. Press the cheese down as you work to fill in all of the crevices. When the mask is full, gently press in the cheese mixture all around the mask. Refrigerate for at least 30 minutes.
- Invert the mask onto a serving platter and gently remove the mask and the plastic wrap. You should be left with a gorgeous (and freaky) face. If there is cheese showing around the bottom edges, use the reserved prosciutto slices to cover it before serving.

- Mix packages of cream cheese with dried beef.
- Add chopped green onions, reserve 1 green top for scarf.
- Blend in garlic powder and horseradish; blend well.
- Form 2 balls, making one slightly larger for the body.
- Roll in dried parsley.
- Stack on top of each other with the larger one on bottom.
- Spread whipped cream cheese as frosting on the snowman.
- Break off irregular pieces of black olive to form 3 buttons down the front.
- Wrap the green onion tops around the neck for a scarf and tie.

- Thoroughly combine the cream cheese, Worcestershire, lemon zest, 3 cups Cheddar and 1 teaspoon salt in the bowl of a stand mixer fitted with the paddle attachment, scraping down the sides with a rubber spatula as needed. Transfer to a bowl, then cover with plastic wrap and chill in the refrigerator until firm, about 30 minutes.
- Roll the cheese mixture into three balls to form the base, body and head of the snowman. (They should be just over 4-, 3-, and 2-inches in diameter.) Roll the balls in the remaining 2 cups Cheddar to create a snowy exterior. Insert a 6- to 8-inch wooden skewer vertically into the largest ball; use it to attach the body and then the head of the snowman.
- Cut an inch off the tapered tip of the carrot and use it for the snowman's nose. Insert the asparagus spears into the body for arms. Use two olive halves for eyes, and the remaining four for buttons. Wrap the thinly shaved cucumber or celery around his neck to form a scarf.
- Serve the snowman on a platter surrounded by crackers.
