Mulled Manhattan Recipes
MULLED MANHATTAN
This classic grape-and-grain mixture came to us from Christopher Tunnah, the general manager and beverage director at the Bedford Post in Bedford, N.Y. It's as jolly and red as a Santa suit, and it derives its Dickensian tang from the nutmeg hints in Angostura bitters and the clove-studded orange flavors of orange bitters. Craving seconds is easy.

- Muddle the orange slice in the bottom of a mixing glass. Fill with ice then add the bourbon, Cointreau and bitters, and stir well. Top with the grape juice, pour into a glass and garnish with the orange twist and cherry.

RUM MANHATTAN-STYLE
The combination of dark rum, amaro, brown sugar syrup and bitters hails from Saltine restaurant in Nashville, where it's called Old Barbados. But as you savor it, the cocktail dispels any notion of a sunlit Caribbean beach. A snowy slope is more like it: Though iced in the making, the drink delivers a generous and lingering sense of warmth.

- Fill a mixing glass with ice cubes. Add the rum, amaro, Demerara syrup and bitters, and stir 20 seconds. Strain into a coupe or martini glass.
CASSIS MANHATTAN
With a rye-bourbon split and just enough slightly herbal crème de cassis to sweeten without overpowering, this manhattan variation is spirit-forward, with layered notes of sugar and spice. If you prefer to keep the drink to one type of whiskey, opt for rye and leave out the bourbon. The cocktail will be slightly more spice-forward and boozier in feel. Whatever you do, let the cherry garnish sit until the very end of the drink for an especially flavorful final snack.

- In a cocktail shaker or mixing glass filled with ice, combine the rye whiskey, bourbon, vermouth, crème de cassis and bitters. Stir until well chilled, about 30 seconds, then strain into a Nick and Nora or coupe glass. Garnish with a cherry.
