MULLED WHITE WINE
This warming drink has the flavorful depth of the classic red version but is lighter in body. Choose a white that's not too acidic, such as a Viognier or an oaked Chardonnay (wines that are more astringent can develop a harsh edge when heated).

Steps:
- Peel orange in strips using a vegetable peeler, being careful not to remove any pith (the white part). Push cloves into peel.
- Combine clove-studded orange peel, the star anise, ginger, water, and sugar in a saucepan over medium heat. Bring to a simmer, stirring to dissolve sugar, and cook for 10 minutes. Remove from heat, and add wine. Let stand for 20 minutes to mull.
- Just before serving, gently reheat mulled wine over medium heat until just beginning to simmer. Serve warm.
MULLED WHITE WINE
I prefer to make mulled wine with white wine because I think it gives a smoother flavor. This recipe has a little rum added at the end for a bit of a kick!

- Combine white wine, apple juice, lemon zest, ginger, sugar, and cinnamon stick in a saucepan over medium-low heat and slowly heat, but do not boil. Keep hot on low heat without simmering for 1 hour to infuse the wine.
- Strain hot mulled wine through a small sieve into heatproof glasses. Add 1 tablespoon rum to each glass.

- Combine 2 bottles dry white wine, 1/2 cup honey and 1/4 cup calvados or brandy in a large dutch oven. Add 6 each allspice berries, black peppercorns and star anise pods, 4 slices fresh ginger, 2 cinnamon sticks and 2 wide strips each lemon and orange zest. Bring to a low simmer and cook 10 to 15 minutes (do not boil). Add a few lemon and orange slices to the pot before serving.
MULLED WHITE WINE WITH PEAR BRANDY
WHAT: White wine infused with cardamom and star anise, as well as the more traditional triumvirate of cinnamon, ginger, and cloves, and amped up with pear brandy. HOW: A slice of Asian pear is added to each drink as a garnish-the pear softens slightly as it absorbs the warm booze and makes for a yummy treat once you've sipped the last of the wine. WHY WE LOVE IT: Like a delicate warm sangria, this drink is the perfect accompaniment to a cozy evening indoors.

- 1. Put the wine in a medium heavy saucepan with the star anise, ginger, cardamom, cloves, and honey (start with 3 tablespoons and adjust later if necessary). Set the pan over medium heat and bring just to a simmer, stirring occasionally. Turn off the heat and let the wine mull for at least 15 minutes.
- 2. Taste and add more honey if you like. Gently reheat the wine until it starts to steam, then turn off the heat and stir in the brandy.
- 3. Divide among 4 mugs or heatproof glasses, putting a few of the whole spices in each mug if you like, and add a slice of Asian pear. Toddy away!
