MUSHROOM STEAK
Usually, I'd make this dish in the oven. But when I knew I wouldn't have time for it to bake one night, I let it simmer all day in the slow cooker and had great results. The leftovers are wonderful! -Sandy Pettinger, Lincoln, Nebraska

- In a large resealable plastic bag, combine the flour, salt and 1/4 teaspoon pepper. Add beef, a few pieces at a time, and shake to coat., In a 3-qt. slow cooker combine the mushrooms, onion and beef. Combine the soup, sherry, oregano, thyme and remaining pepper; pour over top. Cover and cook on low for 7-9 hours or until beef is tender. Serve with noodles.

MUSHROOMS FOR STEAK
This is a wonderful recipe for mushrooms that goes great with a steak. I got the recipe from my boyfriend's mothers recipe box. Everytime we grill steak now we have to have this topping for it. It also goes well on baked potatoes.

Steps:
- Heat a heavy based pan on high.
- Brush oil onto both sides of steak.
- To seal, cook steak 2-3 minutes each side. Turn when juices appear on uncooked side.
- Note: Steak thickness determines cooking time. As a guide: Rare remove after sealing; reduce heat for medium and cook and extra 2-3 minutes each side; Well done, 4-6 minutes each side.
- Test steak by pressing with tongs. Rare feels string. Medium has some resistance. Well done feels quite firm.
- Remove from heat, rest while making sauce. Add onion, mushrooms to any pan juices. Cook 1 minute. Add worcestershire sauce and stock.
- Bring to a boil, stirring constantly until slightly thickened. Add cornstarch in a little water to this mixture if it doesn't become thick enough.
- Add parsley and any juices from rested steak.

These are fantastic on a steak or top a baked potatoes with them. We never have steak without these! You can use fresh or canned! All seasonings are by taste; I think this is the perfect blend but you adjust to your own.

FLANK STEAK WITH SAUCEY MUSHROOMS

- Marinate the steak. Poke the steak all over with the tines of a fork; cut in half, against the grain, to make 2 steaks (one steak may be slightly thicker). In a dish large enough to hold the steaks, combine the olive oil, wine vinegar, shallot, garlic, and the thyme. Season with pepper to taste. Add the steaks and turn to coat evenly. Cover, and marinate the steaks at room temperature for 1 hour, turning once, or refrigerate, for up to 12 hours.
- Make the mushroom sauce. Heat a medium saute pan over high heat, add the butter, and when the foam subsides, add the mushrooms. Reduce the heat to medium-high and cook, the mushrooms, tossing frequently, until browned, about 5 minutes. Season with the 1/2 teaspoon salt and pepper to taste. Add the garlic, shallot, thyme, and rosemary, and cook for 2 minutes more. Pour the red wine into pan, scraping up any browned bits on the bottom of the pan with a wooden spoon. Cook until almost all the liquid has evaporated. Add the cream, parsley, and chives and stir to combine. Set aside.
- Heat a large grill pan over medium-high heat or an outdoor grill to medium-high. Remove the steaks from the marinade and pat dry. Season with salt and pepper. Cook the steaks for 3 to 5 minutes on each side for rare to medium-rare. Set aside on a cutting board for 5 minutes. Cut the steak against the grain on an angle into very thin slices. Arrange the slices on a warmed platter or plates. Reheat the mushroom sauce if needed and add any accumulated meat juices. Pour the sauce over the steak and serve immediately.

- Season steak with salt and pepper on both sides.
- Heat a heavy skillet over high heat until a drop of water immediately sizzles and evaporates when flicked onto the skillet's surface. Pour in oil. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

- Rub both sides of the steaks with salt, pepper, and savory. Heat butter and oil in a large, heavy skillet over medium-high heat; add garlic cloves and steaks. Lower heat to medium, and cook steaks 4 to 6 minutes on each side for medium rare. Transfer steaks to a cutting board. Add mushrooms to the pan, raise heat to high, and saute for 2 minutes on each side. Transfer mushrooms to a small bowl.
- Discard garlic and fat from the pan. Add red wine and stock to the pan. Reduce over high heat, scraping bottom with a wooden spoon, until 1/2 cup of sauce remains. Combine with mushrooms.
- Cut beef crosswise into 1/4-inch-thick slices, and serve with mushroom sauce on the side.

- Mix the steak sauce, onion and brown sugar in a glass dish. Add steaks, coating well; marinate in fridge at least 30 minutes.
- Make mushrooms by combining all ingredients in an aluminum pan. Cover loosely with foil. Place on hot grill. Cover and grill 10 minutes. (Mushrooms can be placed in a 350º oven instead, baking for the directed amount of time). Stir mushrooms after 10 minutes and re-cover them, continuing to cook them for another 8-10 minutes.
- Remove steaks from marinade. Grill until steaks reach desired doneness.
