Steps:
- Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
- Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

BAKED BEANS
My aunt has been bringing these beans to cookouts for as long as I can remember. She finally parted with the recipe. I was surprised at the ease. They bake up so good.

The perfect addition to picnics and barbecues! Simple and delicious. Sure to become one of your favorites. My mother makes this for every family get together. Ham could be added, or more ketchup if desired, but try it this way first - you'll love it!

SMOKY BAKED BEANS (ORIGINALLY CANARY BAKED BEANS)
This was my first time having this type of beans. They reminded me of white navy beans. The bacon and smoked turkey wings give this dish a nice smokey flavor. Epazote has a flavor similar to coriander. It is also called Mexican tea or wormseed. I found this dried in Mexican specialty store This is great with beans because it works to reduce gas. This is a very fragrant and flavored herb that takes some time to get used to. Like cilantro, it has a tenacity that is best mellowed by cooking. Its pungency is well complimented by beans, and it has a mellowing effect on other intense spices. Use of this herb dates back to Aztecan times. Name changed by request of Jen.

OLD FASHIONED FRENCH CANADIAN BAKED BEANS
This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead.
