TOP RATED CLASSIC MEATLOAF
My family enjoyed the slightly spicy taste of this meatloaf. This recipe, submitted by a local DJ, was in our local paper.

Steps:
- Preheat oven 325 degrees Fahrenheit.
- In a large mixing bowl, combine ground beef, cracker crumbs, salt, pepper, egg, onion and tomato sauce.
- Mix lightly.
- Shape into a loaf and place in a baking dish.
- In a small mixing bowl, combine the ketchup, brown sugar, water, mustard and vinegar.
- Brush the loaf with this mixture.
- Place meat loaf in oven and bake 1 hour and 15 minutes, basting occasionally with sauce.
TRADITIONAL MEATLOAF
My daughter hated meat loaf until I made this recipe adapted from other recipes I have read. Now she wants it once a week. I think it is the sweet topping that made the difference.

Steps:
- Combine eggs, milk, and Worcestershire.
- Stir in crumbs, onion, parsley, salt, pepper, sage, chili powder, and garlic powder.
- Add beef and mix well using wet hands; place in a 8x4x2 inch loaf pan.
- Bake in a 350F oven for 1 1/4 hours; drain off any excess fat.
- Mix together catchup, brown sugar, and mustard; spread over meat and return to oven for 10 minutes.

MEATLOAF FOR ONE
When cooking for ourselves alone, we tend not to indulge in the comfort food of family-sized meals such as meatloaf. We're intimidated with thoughts of leftovers or of breaking down recipes for a single portion. This recipe will give you one dinner and perhaps a sandwich or enough to share with a friend.

- Heat oven to 450 degrees.
- In a small bowl beat the egg, milk, 1 Tbsp.
- catsup, worcestershire, mustard, garlic powder, salt/pepper with a fork.
- Mix well, beat in the bread; then add the meat.
- Mix thoroughly to a pasty texture.
- Use small aluminum foil baking tin (these can be found in the supermarket; they're disposal after use) and form loaf.
- Spread remaining catsup over the top and bake for 25 to 30 minutes.
MY MEATLOAF
This is a consolidation of my mom's recipe and my own touches. I use to use just 1 pound (or more) of ground beef, but now that I have changed my eating habits, the turkey is incorporated into it, making it a little healther. Adjust the amounts as you need or to your desires. Sometimes I use more onion, sometimes less. I also sprinkle in garlic powder and Accent every once in a while.

- All measurements are approximates.
- Mix the ground meat with the ingredients listed, with the exception of the ketchup.
- Place in a lightly sprayed loaf pan (sprayed with Pam), top with ketchup (my boys like a thick layer of it on top).
- Bake in a 350 degree oven until thoroughly cooked (45 minutes or more).
- *For the dried bread crumbs, I use 2 to 3 slices of lightly toasted bread that has been chopped up in a food processor.

MEATLOAF
So I had a craving for meatloaf, yes meatloaf, and I haven't made it in years. I had some ideas of what I wanted to try, searched the net for general ideas and then came up with my meatloaf. It turned out to be the best meatloaf ever made in the history of cows and pigs. Ok, well my wife and I enjoyed it. I used homemade pickled eggs but I'm sure you can substitute regular hard boiled eggs.

- Preheat Oven to 350.
- Combine, with your hands, the first ten ingredients. Mix well. It should be a sloppy consistency but not runny. Let it sit for half and hour to let the flavors meld.
- While your meatloaf mixture rests, roast your poblanos. Let cool and skin the peppers. Pull to the tops off the peppers and try to leave the peppers whole.
- In another bowl, combine all the 1/2 cup chili sauce, balsamic vinegar and brown sugar for the sauce. Mix well.
- Cut out a piece of plastic wrap double the size of your loaf pan. Line the bacon vertically on the plastic wrap. Take your meatloaf mixture and spread it over the bacon. Try to leave about a 1/2 inch on the top and bottom.
- Take your whole peppers and stuff one with two eggs and the other with one egg. Insert the pepper with two eggs into the pepper with one egg so that it's like a big long stuffed pepper. Put the peppers on top of the meatloaf mixture, there should be meat on either ends of the pepper.
- Grabbing the plastic wrap closest to you, slowly start to roll the loaf away from you, applying a little pressure to make sure the loaf is solid. Eventually you will have a loaf that is completely wrapped in bacon, wrapped in the plastic wrap.
- With the overhang on either side, spin the loaf gently so that you have a perfect seal. This will help shape the loaf. (There are two schools of thought here, some people cook it in the saran wrap, some don't. I don't, I think the plastic will melt.).
- Carefully place your loaf into your loaf pan. Unravel the plastic wrap on one end and gingerly pull it from the other. The plastic wrap should slide off with ease.
- Pour your sauce on the loaf and bake, uncovered, for about 1 hour 15 minutes to 1 hour 30 minutes.

HOMESTYLE MEATLOAF WITHOUT THE KETCHUP!
This is a meatloaf recipe I came up with because I don't like to put ketchup in my meatloaf (though you certainly could). This recipe got rave reviews from my family. It is great served with garlic mashed potatoes and salad!

- Preheat oven to 350°F.
- In a large bowl, combine ground beef, onion, garlic, and crackers.
- Add 10 oz. V8 vegetable juice (1/2 a can), eggs, salt, pepper, and canned diced tomatoes.
- Knead all ingredients until they are thoroughly dispersed.
- Put mixture into a loaf pan.
- Spoon tomato sauce evenly over the top. I also add a bit more V8 vegetable juice to the top.
- Bake for 1 hour or until the middle is thoroughly cooked.
- Cut into slices and serve.
