FAMILY-FAVORITE PASTA SAUCE
This hearty Italian-style meat sauce has a sweetness that I really love. It's the recipe I use for spaghetti, lasagna and gnocci, which I bake with mozzarella and Parmesan on top. -Jody L Bober, St Clairsville, Ohio

- In a large saucepan, cook the sausage, onion and garlic in oil over medium heat until meat is no longer pink; drain. , Stir in the tomatoes, tomato paste, water, parsley, brown sugar, vinegar and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 1-1/2 hours or until flavors are blended. Serve with pasta. Freeze option: Freeze cooled sauce in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

- In a large skillet, cook the sausage, beef, onion, celery and garlic in oil over medium heat until meat is no longer pink; drain. In a 4-qt. slow cooker, combine the diced tomatoes, tomato soup, mushrooms, tomato sauce, tomato paste, sugar and seasonings. Stir in sausage mixture., Cover and cook on low for 6-8 hours or until flavors are blended. Serve with spaghetti.

- In a large saucepan over medium heat, saute the ground beef, pork and sausage until it is brown. Drain off excess fat. Add the remaining ingredients and stir until smooth. Cook for 3 to 4 hours on medium heat, stirring often to prevent scorching.

Steps:
- Cut crisco and butter into the flour and salt. Beat egg, vinegar and water.
- Mix the egg mixture into the flour mixture.
- Knead together then roll out into 3 pie crusts.
- Nanny would put them into a pie dish and cover and freeze for up to a few weeks.
- For a baked crust bake the crust for about 15 minutes at 375° till golden.

Steps:
- To make the Basic Roux: Heat 3/4 cup oil in a iron skillet. When oil is hot, gradually add 1 cup flour, stirring continuously until well mixed. Lower heat and continue to stir until chocolate brown. When roux is chocolate brown remove from skillet and set aside. If it remains in skillet it will continue to cook and get to dark.
- In a large pot-not a black iron pot-saute onion,celery,bell pepper, garlic and okra in butter for about 10 minutes. Add roux, water and worcestershire.
- Cook for 1 hour.
- Add all other ingredients, except for parsley. Cook for 1 more hour.Adjust seasoning if needed- salt and pepper are to taste. Add parsley.
- Serve over rice.
- This is better the next day- if there is any left. This says serves 6 - Nanny usually made a double batch.

Steps:
- Chop all the veggies.
- Saute veggies in the bacon fat drippings unti soft, but not brown.
- Mix the sauted veggies with the crab meat, bread crumbs and spices.
- With a sharp knife make a slit just under the skin of the flounder. Fill the pocket you create with the mixture.
- Brush the flouder with melted butter.
- Bake 30 minutes covered with foil at 375*.
- Uncover and brown for 10 minutes.
- This will stuff 1 big or a couple small flounder.

- Fill a large pot or Dutch oven half-way with water, bring to a boil. Using a slotted spoon, add tomatoes one at a time until you can't fit any more (about 8-10 tomatoes).
- Boil for 1-2 minutes. Remove tomatoes one at a time with slotted spoon and plunge in an icewater bath. Peel and quarter tomatoes.
- In a food processor, cover and process green peppers and onions in batches until finely chopped (if you want to add extra flavor, saute the peppers and onions in a little oil and a pinch of salt before processing).In a large stockpot, combine the tomatoes (do not discard excess juices from the tomatoes), onion/pepper mixture, tomato paste, soy sauce, Worcestershire sauce, brown sugar, salt, garlic, oregano, basil, pepper flakes, and bay leaves.
- Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 hours, stirring every 15 minutes or so (tomatoes burn easily so keep an eye on it). Discard bay leaves.If you want to make your sauce thick and smooth, use an immersion blender to blend the tomatoes until smooth with no large chunks (you can also blend it in batches in a blender).

- Put olive oil in pan, chop or crush cloves of garlic in oil, heat slowly, do not let burn or turn brown.
