POLAR BEAR PEPPERMINT CREAMS

Steps:
- Sieve the icing sugar into a large bowl. Mix in the egg white, a little at a time - stop adding it when you have a soft dough that feels like plasticine.
- Add 3 drops of the peppermint essence, mix well and taste. Add another drop if it isn't minty enough.
- Roll half the mixture into 15 balls, about the size of cherry tomatoes, then flatten them with your hand to make the bear heads.
- Place on sheets of baking parchment on a large board or tray. Using half the remaining mixture, make blueberry-sized balls and flatten them out onto the heads to make snouts. Add chocolate sweets for the noses.
- Use the rest of the mixture to make the ears. Shape them into tiny balls and press them gently into the top of the heads with your fingertips. Use a cocktail stick to shape the eyes.
- Leave the polar bears to dry for 3-4 hrs, or overnight. Eat within 1 month.

- Spread peanut butter on half of the crackers; top with remaining crackers to make sandwiches. Refrigerate until firm., Dip sandwiches in melted candy coating; allow excess to drip off. Place on waxed paper. Dip marshmallows in coating; allow excess to drip off. Place two marshmallows on top of each cookie for ears., Dip mini crackers in melted candy coating; allow excess to drip off. Place on top of sandwiches for snouts. Top each snout with a blue M&M. Decorate with black sugar pearls for eyes and, if desired, use black decorating icing for mouths. Let stand until set. Refrigerate cookies in an airtight container.

- Open each cookie then place 2 marshmallows into position for ‘ears’. Press cookie back together, squeezing the edge of the marshmallow in between the two cookies and securing the ‘ears’ in place. Repeat with remaining cookies.
- Remove 12 perfectly-shaped candy melts from the package then set aside. Melt the remaining candies according to package directions. Lay a sheet of parchment or wax paper nearby to place cookies once they’ve been dipped. When the candies are melted, dip cookies one at a time, coating them completely.
- Remove the cookie carefully from the melted candy using a fork then gently tap fork on the side of the bowl to smooth the surface and let excess candy fall off. Try to position the cookie on the fork such that the ‘ears’ are supported by the fork while you tap so they don’t fall into the candy. Transfer dipped cookies to parchment paper and repeat until no cookies remain.
- Before the candy sets completely, place a reserved (un-melted) candy disc on the cookie to form a muzzle on the bear. Press lightly into place so the melted candy forms a ridge around the disc. This adds a fun little facial feature to the polar bears. Let bears set until firm but reserve at least a teaspoon of the dipping mixture to use to adhere the noses.
