Steps:

  • Heat 1 tablespoon of oil in a 6-quart Dutch oven over medium- high heat. Add the chicken, paprika, black pepper, garlic powder, Cajun seasoning, cayenne, and salt. Stir to coat.
  • Once chicken is fully cooked, about 5 minutes, add the sausages and cook for 3 minutes.
  • Remove the chicken and sausage from the pot and set aside.
  • Using the same pot, add 1 tablespoon of oil to the pot. Add the onion, celery, green pepper, jalapeño, garlic, and 1 teaspoon of salt. Cook until vegetables are soft and tender, scraping any brown bits on the bottom of the pot, about 8-10 minutes.
  • Add chicken stock, crushed tomatoes, cooked rice, and bay leaves. Stir well and add the chicken and sausage back into the pot. Bring to a simmer.
  • Put the lid on and continue simmering for 10 minutes.
  • Stir in the shrimp. Put the lid back on and cook for 5 minutes, or until shrimp are cooked through.

Steps:

  • Prepare Rice-A-Roni Red Beans and Rice according to package directions. While it is cooking, prepare the onions, celery and garlic and saute in a skillet in a small amount of oil until soft.
  • Open the can of tomatoes and dump into a large stockpot or crockpot. Add the sauteed veggies, cooked chicken and pepper strips to the pot as well. Heat the contents to simmering (or set the crockpot to low if you will be gone all day or high for a few hours).
  • Using the same skillet from before, saute the thinly sliced sausage and add that to the pot also.
  • When the Rice-A-Roni is done, remove the lid from the pot and continue to cook and stir until most of the liquid is evaporated, then add to the pot as well. Mix everything up well.
  • Add hot sauce to taste. If using shrimp, add them close to serving time, so they will heat through but not be overcooked. Heat through and serve.

Steps:

  • Bring a saucepan filled with 2 cups of water to boil and add some salt. Once at a boil, reduce the heat and boil the chicken breasts until they are done - about 25 minutes. Allow the chicken to cool in the broth and then remove them from the liquid. Reserve that chicken broth. Shred the chicken meat and put it aside.
  • Melt the butter in a saute pan and saute the garlic, celery, green pepper and onion until the veggies are limp, about 3 minutes. Set this aside.
  • Bring the reserved chicken broth to a boil. Then add the rice and sausage and bring it back to a boil. Add the tomatoes, the sauteed veggies, shredded chicken and sherry. Simmer this mixture for about 15 minutes.

Even though I'm a born-and-raised Arizonan, both of my grandparents are from southern Louisiana. As a result, I grew up eating a lot of good, homecooked Cajun food!! This isn't a family recipe, but it rivals any I've had. (It's a combination of several recipes I found online.) I find myself craving it once every couple of weeks...luckily my boyfriend loves it too! :-) This can be made with 2 pounds of chicken, or 1 lb chicken + 1 lb smoked sausage. The chicken / shrimp is our favorite way to make it, and the chicken / smoked sausage is a close second.
