Sweet Buns image

Steps:

  • Mix together first 5 ingredients until yeast is completely dissolved.
  • Stir in enough flour to make a fairly stiff dough. Cover with a cloth and let rise in a warm place for 2 hours.
  • Punch down the dough and form into balls (about the size of a small egg for dinner rolls, a bit larger for sandwich buns). Place in a greased baking pan and let them rise till doubled.
  • Bake at 400F, 10-15 minutes or until golden.

3 cups lukewarm water
1 1/2 cups sugar
2 1/4 teaspoons active dry yeast
1 tablespoon lard
1 tablespoon salt
8 cups all-purpose flour

APPLE CARNIVAL BUNS

Traditionally these were served in Denmark during carnival celebrations and are usually served with nuts and raisins. I edited the recipe to include apples (which I love) and omitted the nuts. Don't exceed the amount of filling though because they may burst when baking.

Apple Carnival Buns image

Steps:

  • Line baking sheet with parchment paper and prepare roll mix as directed, adding sugar and cinnamon to the dry ingredients.
  • Blend apples, sugar, and lemon juice and fold in raisins.
  • Divide roll dough in half and roll each half into 16 by 8 rectangle.
  • Using a pizza cutter, cut into 4 inch squares.
  • Place 1 tbsp filling in the center of each square and pull corners together, overlapping.
  • Preheat oven to 375 and place buns, seam side down, on the baking sheet. Cover and let rise for 20 minutes.
  • Bake buns about 15-20 minutes until puffed and golden. Allow to cool.
  • In a small bow, mix powdered sugar, milk, and vanilla until smooth and drizzle icing over the cooled buns.

PARSNIP ROSEMARY BUNS

These yeat-free bread rolls are super easy to make and taste very yummy. They are kind of like a damper with a slightly sweet taste from the parsnip. The original of the recipe comes from wonderful book "Mon premier dîner végétarien" by Alice Hart. If you feel like it, try using carrot in place of the parsnip or even pumpkin or beetroot.

Parsnip Rosemary Buns image

Steps:

  • In a big bowl combine parsnip, flours, baking powder, baking soda, rosemary, salt and garlic powder.
  • Make a well in the centre and add the egg, yogurt and applesauce to it. Quickly knead into a doug (it will be shaggy). If dough doesnt come together, add 1 tbs or so more yogurt. Do not overwork the dough!
  • Divide dough into 9 parts and roll each part into a ball. Place the balls on a paper-lined baking sheet.
  • Using a sharp knife make a cross on top of each bun.
  • Bake in the pre-heated oven at 190°C/375°F for 25-30 minutes or until golden on top and baked through.
  • These are best eaten warm, but I like them cooled, too.

These yeasty sweet buns are served at the All Steak! restaurant in Cullman,Alabama. The recipe was in the R.S.V.P. section of a November 1985 issue of Bon Appetit magazine. Rising time for rolls is not included in prep time.

Steps:

  • For Dough:.
  • Crumble yeast into large bowl, stir in water and sugar.
  • Let stand until foamy, about 10 minutes.
  • Stir shortening,egg and salt into yeast mixture.
  • Add flour 1/4 cup at a time, stirring until mixture is smooth.
  • Grease bowl; add dough, turning to coat entire surface.
  • Cover and let rise in draft-free area until doubled in volumn, about 1 1/2 hours.
  • For Filling:.
  • Beat butter and sugar to blend well; stir in orange peel.
  • To Assemble:.
  • Roll dough out on generously floured surface to thickness of 3/16 inch.
  • Spread filling evenly over dough; roll dough up into cylinder, as for jelly roll.
  • Cut into 1 1/2-inch-thick slices.
  • Set each slice in paper muffin liner; arrange on baking sheet.
  • Cover with towel and let rise in warm draft-free area 30 minutes.
  • Preheat oven to 400 degrees.
  • Bake rolls until lightly browned on top, about 12 minutes.
