CARAMEL APPLE PORK CHOPS

Warm, spicy, and sweet, this wonderful Fall recipe is a guaranteed favorite for kids, and is great with smashed potatoes and buttered green beans.

Caramel Apple Pork Chops image

Steps:

  • Preheat oven to 175 degrees F (80 degrees C). Place a medium dish in the oven to warm.
  • Heat a large skillet over medium-high heat. Brush chops lightly with oil and place in hot pan. Cook for 5 to 6 minutes, turning occasionally, or until done. Transfer to the warm dish, and keep warm in the preheated oven.
  • In a small bowl, combine brown sugar, salt and pepper, cinnamon and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Cover and cook until apples are just tender. Remove apples with a slotted spoon and arrange on top of chops. Keep warm in the preheated oven.
  • Continue cooking sauce uncovered in skillet, until thickened slightly. Spoon sauce over apples and chops. Sprinkle with pecans.

3 tablespoons pecans

CARAMELIZED GRILLED PORK

I've been looking for recipes to use up some Asian condiments and came across this one which I plan on making soon. I think this pork will be great as part as an Asian meal with rice ans stir fry vegetables or with rice noodle salad. Recipe source: Gourmet (June 2005)

Caramelized Grilled Pork image

Steps:

  • Pound chops between 2 sheets of plastic wrap or wax paper with a meat pounder (flat side) or rolling pin until meat is 1/8 inch thick.
  • Make several small slits around edge of each chop.
  • Half each chop lengthwise and transfer to bowl.
  • In a saucepan cook sugar over medium heat until it begins to melt, continue cooking stirring until sugar is melted into a golden caramel.
  • Add shallots, lime juice, fish sauce and salt and cook 2 minutes longer or until caramel is dissolved and shallots are softened.
  • Pour sauce over pork, toss.
  • Heat a grill pan over heat until hot, but not smoking.
  • Grill pork in batches, turning once until cooked through (1-3 minutes per side).
  • Discard any remaining caramel sauce.

  • Peel and core pineapple. Cut half of pineapple into bite-size pieces (about 1"); set aside. Chop remaining pineapple into small pieces and transfer to a small saucepan. Cook over low heat, stirring occasionally, until very soft and broken down and nearly all juice is evaporated, 15–18 minutes. Transfer to a blender and add ¼ cup water; purée until smooth.
  • Heat 2 Tbsp. oil in a large Dutch oven or other heavy pot over medium-high. Lightly season pork with salt and pepper. Working in 2 batches, cook pork until well browned on all sides, 5–8 minutes per batch. Transfer to a plate.
  • Reduce heat to medium-low and add onion and garlic to same pot. Cook, stirring often, until fragrant and softened, about 5 minutes. Return pork to pot and stir in pineapple purée. Add vinegar, soy sauce, oyster sauce, peppercorns, bay leaves, and ¾ cup water and stir to combine. Bring to a simmer and cover pot. Reduce heat so adobo is at a very gentle simmer and cook until pork is tender, 45–50 minutes.
  • Meanwhile, heat remaining 2 tsp. oil in a large skillet over medium-high. Cook reserved bite-size pineapple pieces, tossing occasionally, until golden brown all over, 5–8 minutes. Transfer to a plate.
