MAKE AHEAD FRENCH TOAST
We have made this French Toast for Christmas brunch for twenty four years! It originally came from the East Coast. If you like your French toast firmer, then cut back on the milk.

Steps:
- In a large bowl, whisk together eggs, milk, cream and vanilla. Dip bread slices into egg mixture and place in a lightly greased 9x13 inch baking pan. Refrigerate overnight.
- The next morning: Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, combine butter, sugar, maple syrup and pecans. Spoon mixture over bread.
- Bake in preheated oven until golden, about 40 minutes. Let stand 5 minutes before serving.

EASY NIGHT BEFORE FRENCH TOAST RAPHAEL
My family and friends just love this recipe! It's easy, delicious, and you make it the night before so there is no work in the morning. Just pop it in the oven and by the time the table is set and coffee is on, it's ready! I believe this recipe came from the Best of Bridge cookbook. Great served with fresh fruit or yogurt. Can also be cooked in casserole dish on the barbeque so you don't heat up your house on a hot day!

Steps:
- Put half the bread into the bottom of a greased 9 x 11 pan.
- Dot cubed cheese on top.
- Cover with the rest of the bread.
- Combine remaining ingredients and pour over bread mixture.
- Cover and refrigerate overnight.
- Bake at 375 degrees for 45 minutes in the morning.
- Drizzle with more syrup over top when finished baking.
- Serve while hot.
- Another variation is to add a layer of your favourite fresh fruit.
- (peaches, blueberries, apples)on top the first layer of bread cubes.
OVERNIGHT FRENCH TOAST II
Make this the night before and enjoy brunch with your kids rather than catering to them! Also great for taking places because the syrup is built-in.

Steps:
- Combine the corn syrup , butter, and brown sugar in a small saucepan and simmer until the sugar has melted. Pour this mixture over the bottom of a greased 9x13 inch casserole dish.
- Place the bread slices over the sugar-butter mixture in the dish. In a bowl, beat together the eggs, milk, vanilla, and salt; pour this mixture over the bread. Cover the dish and let it stand in the refrigerator overnight.
- The next morning, preheat oven to 350 degrees F (175 degrees C).
- Uncover the pan and bake for 45 minutes. Serve while hot or warm or the French toast will harden in the pan. It can be reheated.

Steps:
- Grease a 13 x 9 x 2 inch pan.
- Cut bread into 1 inch slices and arrange in one layer in bottom of pan.
- Beat eggs with remaining ingredients, except butter, and pour over bread in pan.
- Cover with foil and refrigerate 4-36 hours. To bake, uncover pan, dot with butter, sprinkle with cinnamon and sugar.
- Bake at 350 degrees in center of oven for 45-50 minutes.
- Remove and let stand for 5 minutes.
- Serve with choice of syrup, honey, yogurt, or fresh fruit.

OVERNIGHT FRENCH TOAST
If you have a crowd for breakfast, overnight French toast is a winning idea. Instead of standing over the stove, cooking slice after slice, it bakes in the oven and emerges puffed and golden and ready for a big glug of maple syrup. Try making it with a stale loaf that you forgot to eat amid all the other holiday goodies. A fat brioche, fruit-filled panettone or a braided challah all work well. Stay away from croissants, though: Their chewy interiors are best enjoyed fresh.

- Butter a 2-quart baking dish. Butter the front sides of the slices of bread and shingle the slices upright in the dish, overlapping as necessary. Nestle the raisins evenly between the slices of bread but not on top.
- In a large bowl, whisk together eggs, milk, cream, sugar, cinnamon, nutmeg, vanilla and salt until well combined. Pour the milk mixture over the bread and press the bread gently to absorb. Cover with plastic wrap and refrigerate overnight.
- Heat oven to 350 degrees. Remove the plastic wrap. Sprinkle the pecans evenly over the top. Bake until puffed, golden and set in the center, 50 to 60 minutes. While baking, if the top begins to get too dark, tent with foil. Let stand 10 minutes. Dust with confectioners' sugar and serve with maple syrup.

- Grease 8x8 pan.
- In a small saucepan, melt margarine and brown sugar. Pour into baking pan. Place bread on top of the mixture. In a small bowl, beat eggs, milk and cinnamon together. Pour egg mixture over bread. Cover and place in fridge overnight.
- Bake uncovered at 350F for 30 minutes or until lightly browned.
- Serve with syrup and/or fruit. To add extra calories, add extra 2 tablespoons butter or margarine and use whole milk. Brunch/lunch is so easy when made the night before.

- The night before, beat the eggs with the milk. Add a little cream or use half and half if you want to be more posh! Don't forget some vanilla, then whisk well.
- Using stale bread is better than fresh, and you can use egg bread, croissants, panettone, or challah, too. I used homemade bread. I cut slices and allowed it to dry for about a couple of hours before using it.
- Don't worry about the ratio of ingredients as you really can't mess this up. Place some leftover bread in the egg mixture until it's all soaked up on both sides.
- After the egg mixture has soaked in, sprinkle a little cinnamon on both sides of each slice. The reason I do this is that you are able to control how much cinnamon is on each piece of bread. Cover and refrigerate the overnight French toast.
