CAN'T TELL THEY'RE LOW-FAT BROWNIES
This was my attempt to make my mom's brownie recipe lower in fat. My family loves them!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square pan.
- In a medium bowl, stir together flour, cocoa, sugar, and salt. Pour in oil, vanilla, prunes, and eggs. Mix until everything is well blended. Spread the batter evenly into the prepared pan.
- Bake for 30 minutes in the preheated oven, or until top is shiny and a toothpick inserted into the center comes out clean.

Steps:
- Preheat oven to 350°F. Grease 8-inch square pan with 2-inch-high sides. Combine first 5 ingredients in large bowl. Add oil, egg whites and vanilla and blend. Stir in walnuts. Transfer to prepared pan. Bake until brownies are slightly puffed in center and edges are beginning to brown, about 30 minutes. Cover hot brownies in pan with foil and chill overnight. Cut brownies into 16 2-inch squares. (Can be prepared 3 days ahead. Store in airtight container.)

Steps:
- Preheat oven to 350°F.
- Spray a square non-stick baking pan (8 inch x 8 inch) with non-stick cooking spray.
- Combine the ingredients in a large mixing bowl, blend well. Pour batter into pan and bake 20-30 minutes until cooked. To test if batter is cooked, insert a toothpick. If it comes out clean, brownie is cooked.
- Remove from oven and let cool for five minutes in pan.
- Gently remove from pan; place on wire rack and when cool, sprinkle with icing sugar if desired. Cut into eight squares. Enjoy!

- Preheat oven to 350.
- Spray baking dish with cooking spray.
- Mix 6 dry ingredients; set aside.
- Separately fork-froth the Ener-G & water; add vanilla.
- Combine egg whites, cheese, & canola in skillet over medium heat, stirring as cheese melts.
- Add the Ener-G mixture & vanilla.
- If eggs start to cook, remove from heat for a bit, stir more.
- Now add dry ingredients to mixture in skillet.
- Stir, pour into baking dish.
- Bake for 15 minutes. Let cool 10-15 minutes before cutting.
- Makes 16 snack-sized brownies, 97 calories each, or 12 huge brownies, 130 calories each. In each 12-size brownie: 5 g protein, 2 g dietary carbs. (Two of these brownies = the amount of protein in a hamburger.).

- Place a rack in the center of your oven and preheat the oven to 350 degrees F. Line an 8x8-inch baking pan with parchment paper so that the paper overhangs 2 opposite sides like handles. Lightly coat the paper with non-stick spray. Set aside.
- In a large mixing bowl, stir together the all-purpose flour, white whole wheat flour, granulated sugar, cocoa powder, baking powder, and salt until well combined.
- Add the applesauce, coffee, canola oil, and vanilla. Whisk until smoothly combined. Fold in the chocolate chips.
- Scrape the batter into the prepared pan and smooth the top. Bake the brownies for 15 minutes, until the edges are set, the center looks slightly under baked, and a toothpick inserted in the center comes out without any wet batter clinging to it (a few moist crumbs are fine). Place the pan on a wire rack and let cool for at least 1 hour (these actually taste even better refrigerated overnight if you can stand the suspense). Lift onto a cutting board using the parchment handles. Slice and serve.
