QUICK HOMEMADE APPLESAUCE - NO SUGAR ADDED
A quick, easy homemade applesauce recipe that I served with potato latkes this year. It has no added sugar, which makes it a better option for diabetics and low-carb people and others who avoid cane sugar. But if you prefer a sweeter sauce, add 1/2 cup of sugar. I recommend using 1/2 sweet apples (I like Braeburn) and 1/2 tart apples (Granny Smith, for example). Don't leave out the salt, it's a necessary ingredient for a good applesauce!

Steps:
- Peel and core apples (I prefer to leave the skin on a few of them because I like the taste and texture). Cut apples into approximately 1 inch cubes.
- Add all ingredients to pot, and turn heat on high. Bring to a boil, then cover and reduce heat to low. Simmer for 20 minutes or until the apples have softened significantly.
- Stir frequently, making sure that the apples are not sticking to the bottom of the pot. Add more water if necessary. Remove lemon slices.
- Mash with a potato masher or use a food mill for a smoother consistency. Serve warm or at room temperature.
CRANBERRY APPLESAUCE - NO SUGAR ADDED
This is a vividly pink, wonderfully tart cranberry applesauce. Makes a great condiment for savory foods such as meat or potato pancakes, and also wonderful when eaten alone. It has no sugar added, thus it is VERY tart (which I love) - If you prefer a sweeter sauce, add 1/2 cup of sugar. I recommend using 1/2 sweet apples (I like Braeburn) and 1/2 tart apples (Granny Smith, for example).

HEALTHY APPLESAUCE PANCAKES WITH NO SUGAR ADDED
These pancakes freeze very well! Make them small for toddlers to hold or larger for the rest of the family. I like to use flavored (blueberry, strawberry, etc) applesauce without any added sugar. If you use a flavored applesauce, you may omit the vanilla flavoring. The flavors are great so that there is no need for syrup! This recipe is adapted from www.wholesometoddlerfood.com

CINDY'S SUGAR FREE HOMEMADE APPLESAUCE
This is an old recipe I got from my mother years ago, but have changed to be sugar free. You can use sugar instead of Splenda if you choose. I use MacIntosh apples but any soft apple will do.

APPLE PUREE/APPLESAUCE & REAL APPLE JUICE (NO ADDED SUGAR)
This may sound weird, but I love baby food, only certain types though, the yoghurts and fruit purees, and you know they have no rubbish so can eat them without the guilt, this is my favourite baby food. If you want to make more for storage, just add more apples and use required water. it also works great as an applesauce for pork if you don't puree it

- To a medium saucepan (see notes for Instant Pot instructions) add peeled chopped apples, cinnamon, a dash of water (~2-3 Tbsp / 30-45 ml as original recipe is written), and lemon juice or apple cider vinegar. Stir.
- Cover and cook over medium heat until it simmers, then reduce heat to low / medium-low and continue cooking until the apples are very tender and slightly caramelized — about 15-20 minutes. Stir occasionally.
- Use the back of a wooden spoon or potato masher to mash into a loose sauce. You could also blend with an immersion blender, in a food processor or high-speed blender for smoother texture (optional) – a helpful step if you left the skins on. Add a dash of maple syrup or sugar of choice to sweeten (optional – depends on sweetness of your apples).
- Enjoy fresh, or store cooled leftovers in the refrigerator up to 4-5 days, or in the freezer up to 1 month. Enjoy cold or reheated in the microwave or on the stovetop over low heat until hot (add more water as needed if dry).

- In a large saucepan over medium to high heat, combine the apples, water, and lemon juice . Bring the mixture to a boil and then set the heat to low and cover with a lid to simmer. It should take about 10-15 minutes for your apples to become soft.
- Once your apples are soft you can remove the applesauce from the heat. Stir in the remaining ingredients adding additional as needed. Tip: If your apple sauce is too chunky for your tastes, you can puree it through a food processor or strong blender (may have to do batches). Another option is to use a potato masher to mash it down.
- Store your applesauce in a closed container, such as a canning jar , for up to a week in the refrigerator.
