GRANDMA'S NOODLE PUDDING (KUGEL)

My grandma gave me her recipe for this family favorite. We always ate this at Hanukkah dinner, but I could really eat it for any meal, anytime!

Grandma's Noodle Pudding (Kugel) image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in the egg noodles, and return to a boil. Cook uncovered, stirring occasionally, until the noodles have cooked through, but are still firm to the bite, about 5 minutes. Drain well. Place cooked noodles into a mixing bowl.
  • With an electric mixer, beat egg whites in a bowl until they form stiff peaks; set egg whites aside. Whisk the egg yolks together in a bowl until smooth, and mix in the sugar until well combined. Pour egg yolk mixture over the noodles, and mix in the cinnamon, apples, raisins, and almonds. Gently fold in the beaten egg whites, trying to keep as much volume as possible. Pour the kugel into the prepared baking dish.
  • Bake in the preheated oven until the kugel is browned and the center is set, about 30 minutes.

  • Preheat oven to 375 degrees. Butter a 9-by-13-inch baking dish. In a large pot of boiling salted water, cook noodles until al dente, according to package instructions. Drain, and cool.
  • In a large bowl, whisk together cream cheese, sour cream, cottage cheese, milk, sugar, and eggs until smooth. Toss mixture with noodles, coating evenly. Season with salt. Transfer noodle mixture to prepared dish; dot with butter. Bake until golden, 45 to 50 minutes.

Steps:

  • Bring a large pot of water to a boil, add the noodles, and boil until cooked through but not mushy. Drain well and set aside.
  • Preheat the oven to 350 degrees and butter an 8 by 8-inch baking dish.
  • In a large bowl, whisk the eggs until frothy. Whisk in the cheese, brown sugar, sour cream, milk, salt, vanilla, cinnamon, nutmeg and apple juice concentrate. Add the drained noodles, butter pieces and lingonberry preserves and mix. Pour into the prepared pan, sprinkle with cinnamon sugar, and bake until the pudding is set and butter is bubbling around the edges, 30 to 40 minutes. Let cool 10 minutes before serving. Serve warm or at room temperature, cut into squares and top with a dollop of sour cream, if desired.

  • Heat oven to 350 degrees. In a small saucepan over low heat, warm the milk, butter, 1 teaspoon cinnamon, 1/2 cup sugar and the salt.   • Boil noodles in salted water until just barely tender. Strain the noodles and rinse with cold water; place in bowl.

Steps:

  • Preheat the oven to 350 degrees F. In a small bowl, mix together the corn flakes, 1/4 cup of the sugar, cinnamon, and nutmeg.
  • Bring a large pot of water to a boil, salt, and boil the noodles according to package instructions. Drain, and transfer to a large bowl, and toss with the 1/3 cup butter.
  • Meanwhile, in large bowl, combine the cream cheese and remaining 1/2 cup sugar and mix, using a hand held mixer, until light and airy. Add the eggs, milk, and nectar and continue mixing until fully incorporated. Stir the cheese mixture evenly into the noodles. Low Carb Noodle Pudding image

Steps:

  • Cook the squash by placing in boiling water for about 20-30 minutes - let cool.
  • Pre-heat oven to 350.
  • After squash has cooled cut open and take out the insides using a fork.
  • Mix the squash with the next 8 ingredients, and place in a 9X12 pan sprayed with the butter spray.
  • In a small bowl spray some butter sray on the cereal, crunch it a bit with your fingers and sprinkle over the pudding.
  • Bake for about 1 hour 20 minutes, you may have to place foil over the top towards the end so the cereal doesn't get too crispy. Check for doneness by inserting a sharp knife in the center, it should come out clean. Remove from oven and let get to room temp or refrigerate and serve cold, either way it is yummy and an interesting way to use spaghetti squash.

3/4 cup Splenda granular (pouch not packets)
1/2 cup low carb French vanilla flavored coffee creamer, its usually in the milk area of supermarkets
3/4 cup raisins
1/2 teaspoon cinnamon (or more)
3/4 cup butter, melted
1 cup vanilla Special K cereal
butter-flavored cooking spray (I use "I can't believe its not butter")

NOODLE PUDDING

Unlike the other noodle puddings that I have seen on this website, this recipe is more like individual casseroles than a pudding. It is savory instead of sweet. Egg noodles, mixed with sour cream, cottage cheese and Cheddar cheese then topped with a buttery panko crust and baked. I got this recipe out of the February 2011 Country living magazine.

Steps:

  • Preheat oven to 350°F In a small bowl, toss panko with melted butter and set aside. Butter six 1-cup ramekins.
  • In a large bowl, combine remaining ingredients. Divide noodle mixture between prepared ramekins and top with reserved bread crumbs. Bake for 1 hour. Serve hot.

1 cup panko breadcrumbs, bread crumbs
1 tablespoon unsalted butter, melted, plus more for greasing ramekins
8 ounces wide egg noodles, cooked and drained
1 cup sour cream
1 cup cottage cheese
1/2 cup grated sharp cheddar cheese
1 medium onion, finely diced
1 garlic clove, finely chopped
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon red pepper flakes (to taste)

Rich Noodle Pudding (Kugel) image

Steps:

  • Boil noodles according to directions on package and drain.
  • In seperate pot melt butter, once melted, take off the heat and add cream cheese and heavy cream.
  • Beat the eggs in a separate bowl. Add sugar and vanilla to the eggs.
  • Combine the eggs and cream mixture and pour into a large Pyrex baking dish.
  • Add the noodles and mix. Sprinkle with cinnamon to taste.
  • Bake at 350 degrees F. for 1 hour.

1 (16 ounce) bag egg noodles, fine baby style
2 (8 ounce) cream cheese, room temperature
1 cup butter
1 pint sour cream
1 pint heavy cream
2 cups sugar
10 -12 eggs
1 teaspoon vanilla
