- In a saucepan combine vinegar, sugar, tomato sauce, flour, red pepper and salt. Bring mixture to a boil. Simmer for 2 to 3 minutes, or until slightly thickened. Transfer to a bowl and stir in scallion and coriander.
NORTHERN-STYLE RIBS
These are our most recognizable ribs because of the red sauce they're slathered in. You don't need special seasonings because the smoke and the sauce add more than enough flavor.

- Prepare your smoker or grill for barbecuing, using the indirect heat setup with a drip pan in place, and preheat to 210 degrees F. Pat the ribs dry, then season with the salt.
- Pour some water in the drip pan and place some presoaked wood chunks or a packet of presoaked wood chips directly on the hot coals. Oil the hot grate and place the ribs in your grill or smoker, meat side up. Cover and smoke for a total of 6 hours. After about 5 hours, begin to baste the ribs with the BBQ Sauce about every 20 minutes. The ribs are done when the meat cracks when picked up (with tongs) and they reach an internal temperature of 170 to 180 degrees F.
- To finish the ribs, throw them on the grill over direct medium heat to let the sauce caramelize. Baste between turns, and you're done.
- This is our core sauce based on the western North Carolina style. It's a good idea to keep extra in the fridge because it goes well with everything from fries to chicken fingers. Whisk all the ingredients together in a nonreactive saucepan, place over medium-high heat, and bring to a boil.
- Lower the heat and simmer for 15 to 20 minutes, until the sauce just coats the back of a wooden spoon--it's not intended to be overly thick.
- Cool and use immediately or store for later use in the fridge, where it will keep for 2 to 3 months.

- Cover bottom of Dutch oven with water and soup mix.
- Mix the garlic powder and paprika into into the duck sauce.
- Using the mixture like a glaze, coat the meat, all over. Place the brisket in the Dutch oven and cover.
- Bake at 350 degrees for 2 hours. Remove and slice after it cools a bit and return the meat and sauce to the oven for another hour.

SWEET AND SOUR DUCK
From the Cantonese region of China, this is a lovely home-style dish which is easy to make, deliciously fruity and ready in minutes. Serve with egg fried rice or plain rice.

Steps:
- Remove the skin from the duck breasts and cut the duck into thin slices. Put the duck slices in a bowl with a pinch of salt, the white pepper, rice wine or dry sherry and the cornstarch. Mix well.
- Heat a wok over a high heat and pour in the peanut oil. Heat the oil to 350F or until a cube of bread dropped in turns golden brown in 15 seconds and floats to the surface.
- Shallow fry the duck in the oil for about 2 mins, stirring now and again, until golden and crispy on the outside.
- Take the wok off the heat, remove the duck with a slotted spoon and drain on absorbent kitchen paper. Pour the oil from the wok through a fine seive into a bowl.
- Return 1 tbs of the oil to the wok (you can discard the rest) and return the wok to a high heat. When the oil starts to smoke, add the ginger and stir fry for a few seconds., then add the red pepper and stir fry for 1 minute.
- Return the fried duck slices to the wok. Next add the orange juice, lime juice and soy sauce and toss together until well combined.
- Serve immediately.
