NUT, SEED 'N FIBER BREAD - ABM
Bet your crew will never figure out what's in this bread - or that it is good for 'em! But I guarantee they will gobble this down, never the wiser the ingredients are very healthy. Bread makes a lovely sandwich for sweet or savory fillings - it holds together well but is not tough. For the nutritionally oriented - this makes 2 powerful loaves of bread! Prunes are a good source of vitamins A and B, are high in fiber, and are rich in iron, calcium, and phosphorus. From New Scientist, "A tablespoon of blackstrap molasses, which is still 70 per cent sugar, has an iron content which is similar to a steak ..." Alpha linolenic acid, the omega-3 fat found in flaxseed and walnuts, promotes bone health by helping to prevent excessive bone turnover-when consumption of foods rich in this omega-3 fat results in a lower ratio of omega-6 to omega-3 fats in the diet.(Griel AE, Kris-Etherton PM, et al. Nutrition Journal) Pumpkin seeds are a very good source of the minerals phosphorous, magnesium and manganese. They are also a good source of other minerals including zinc, iron and copper. In addition, pumpkin seeds are a good source of protein and vitamin K. Pumpkin seeds may promote prostate health, anti-inflammatory benefits in arthritis, lower cholesterol & protection for aging bones (whfoods.com). Enough already - make the bread!!! **vital wheat gluten has vitamin C in it - it helps provide good texture & keeps loaf fresh longer (not that it matters with this bread!).

- Follow directions of your bread machine for order to add wet & dry.
- Mix first five ingredients (the dry) in a large bowl & then put in the bread machine (mine loads dry first).
- Mix next three ingredients (the wet) & add to bread machine.
- Load the yeast (my machine has a dropdown for yeast - if yours does not, simply mix yeast in with the dry ingredients).
- Process on "dough, raisin" & add last four ingredients when the bell sounds (if no "raisin" option add these ingredients halfway through last mixing in your machine.
- ***may be made by hand using same ingredients, kneading to a nice elasticity, allowing to rise warm & cover for 90 minutes, then kneading an additional 10 minutes, then proceding as below.******.
- Divide dough into 2 portions, slash tops several times with a razor-sharp knife. Allow to rise 30 minutes. I like to brush the tops with heavy cream before making the sllashes - entirely up to you.
- Preheat oven to 375 degrees. Bake 35 - 40 minutes - until clean knife inserted to center comes out clean & they sound hollow when tapped on bottom.

HEALTHY MULTIGRAIN AND SEED BREAD
This bread is a staple in my house, it is hearty and is easily adjustible to what you have on hand. No need to knead. :-) High in Omega 3 and fiber. Whole wheat, cornmeal, flax, whet germ or whatever you have on hand. I like it toasted with my veggie burger. My DH likes his with cold chicken, spicy mustard and lettuce. I've even made the most delicious crutons with this bread some butter, garlic and season salt. Healthy has never been this easy or delicious.

Steps:
- Mix all ingredients together (I use my KitchenAid mixer) until a slightly sticky ball forms. You may not need the full amount of water. If you don't buy yeast in bulk, you can use one full package yeast.
- Place in a clean oiled (I use nonstick spray) covered bowl to rise for one hour. While mixing the dough I preheat the oven to @ 200, turn it off and let the bread rise there.
- Form into a loaf, put in 8 1/2 by 4 1/2 oiled (or nonstick sprayed) loaf pan and put in a warm dry place to rise once more for up to 1 1/2 hours. Allow the bread to rise until it crowns above the top edge of the pan. Be careful not to let it rise too much or it will deflate some while cooking.
- Remove the cover, and cook at 350 for 35 to 40 minutes. I let the bread stay in the oven while it preheats.
- ** You can experiment with different flours based on what you have in your pantry.
- ** Try adding different seed combinations or pine nuts -- yum.

- Start at the top (recommended) or the bottom of the list, and put all the ingredients into the bread machine. Just make sure the salt and wet stuff stays away from the yeast until it mixes. If you like the old fashioned way, that will work too - just use your usual process.
- For rolls, use the dough cycle. When that cycle is done, dump it out on a floured surface and cut everything into even quarters, twice. Put the wads, evenly spaced, on a lightly oiled cookie sheet. Let them rise once more in a warm area covered with waxed paper for a half hour or a little longer until they have roughly doubled in size, depending on how knocked down they got while cutting. Cook in an oven, preheated to 375 degrees, for 20 minutes or until they are nicely browned top and bottom. Brush with melted butter if desired.

- Pre-heat the oven to 325 F (165 C) degrees. Spread the walnuts and pumpkin seeds on a sheet pan and toast until golden, shuffling the pan occasionally, 10-15 minutes. Take it out of the oven and set aside.
- Mix together the rolled oats, cranberries, flaxseeds, psyllium husks, chia seeds, salt, cinnamon, and nutmeg in a large mixing bowl. Stir in the warm walnuts and pumpkin seeds.
- Add the pumpkin puree, water, maple syrup, and oil. Using a sturdy wooden spoon, stir well to make sure that the all the ingredients are evenly distributed and the dough is moistened through.
- Line a 9X5 (23cm X 13cm) loaf pan on all sides with parchment paper. Gently scrape the dough into the pan. Gently pack it into the pan while rounding it slightly on top. Cover it tightly with a piece of plastic wrap and let it sit in room temperature, 2-8 hours.

- Place the whole almonds and hazelnuts in a food processor and pulse until coarsely ground. Add the pumpkin seeds, sesame seeds and flax seeds and pulse until ground. Add the almond meal, hazelnut meal, coconut flour, salt and baking soda and pulse until combined.
- In a separate bowl, combine the nut milk, eggs, melted coconut oil, honey and cider vinegar. Pour the mixture into the food processor. Process until the mixture is thoroughly combined. Let the mixture sit for 5 minutes.
- Line a 8x4 inch loaf pan with parchment paper. Spread the mixture into the lined loaf pan and use a spoon to smooth down the surface. Sprinkle the top with some extra pumpkin, flax and sesame seeds (I also used sunflower seeds for the top. See NOTE).
- Preheat the oven to 350 degrees F. Bake the bread on the middle shelf for 45-50 minutes or until a toothpick inserted into the center of the bread comes out clean. Let the bread cool completely and then remove it from the pan.
