NUTS AND BOLTS SNACK MIX

The classic cereal snack mix often goes by the name "nuts and bolts," making it a perfect treat for a handy dad. Our version is made with an addictive blend of savory seasonings and spices.

Nuts and Bolts Snack Mix image

Steps:

  • Preheat oven to 225 degrees. Combine toasted corn cereal, pretzels, and peanuts in a large bowl. Mince garlic and mash into a paste with salt. Stir together garlic paste, melted butter, Worcestershire sauce, paprika, and cayenne pepper. Pour over cereal mixture; toss to coat using a rubber spatula. Spread mixture evenly on a rimmed baking sheet. Bake, gently stirring every 20 minutes, until toasted, about 1 hour 20 minutes. Add rosemary. Bake for 20 minutes more. Let cool completely.

3 cups toasted corn cereal, such as Chex
1 1/2 cups bite-size pretzels
1 cup salted dry-roasted peanuts
2 garlic cloves
1/2 teaspoon coarse salt
5 tablespoons unsalted butter
2 tablespoons Worcestershire sauce
1 1/2 teaspoons paprika
1/4 teaspoon cayenne pepper
1/4 cup fresh rosemary

Steps:

  • Combine cereals, pretzels and nuts. In a small saucepan, melt butter; stir in seasonings. Pour over cereal mixture; toss to coat. Spread in an ungreased 15x10-in. rimmed pan. Bake at 250° 1 hour, stirring every 15 minutes. Store in an airtight container.

1-1/2 cups salted peanuts
1/4 cup butter, cubed
3 teaspoons Worcestershire sauce
1/2 teaspoon celery salt

1/2 teaspoon garlic salt
1/2 teaspoon paprika

NUTS AND BOLTS CHEX MIX

I consider this to be the real original chex mix. My Mom was making this back in the 60's before "Chex Mix" was a thing, we called it "Nuts & Bolts" I have tweaked it slightly as I like it a little more savory...just a little more seasoning and Worcestershire sauce. This makes approx 34 cups of mix, I use a big aluminum turkey tray from Sams Club to make it.

Steps:

  • Preheat oven to 250 deg F.
  • Melt butter in small pan and add Worcestershire sauce and seasonings to the melted butter.
  • Combine all cereal, nuts and pretzels in a large pan.
  • Pour 1/2 butter mixture over the cereal mixture and mix well, then pour the remaining butter mixture over the cereal and mix again.
  • Bake at 250 deg F for 1-1/2 hour stirring well every 15 minutes.
  • let cool for several hours or over night then bag in zip lock bags.

  • Divide the nuts, cereals and pretzels between two or three large baking pans. You’ll need high sided pans to allow for stirring the mixture while baking. Use three pans if needed and rotate the pans while baking.
  • Combine the butter, Worcestershire, celery salt, garlic salt and chili powder is a large, microwave safe bowl. Microwave on medium power for 2 minutes, then stir. Repeat until all the butter is melted. Mix well. Using a large spoon or ladle, drizzle the butter mixture over the cereal and nuts, stirring the butter mixture as you go to distribute all the spices that may settle in the bottom of the bowl.
  • Bake for 3 hours gently stirring every 15 minutes taking care not to crush the cereal. Use a large flat spatula if you have one, pulling up from the bottom of the pan to ensure all pieces are well coated in the butter mixture. Rotate the pans if needed.
