Since half the fun of cookies is baking them, I give this merry-making mix as a gift. The ingredients look so pretty in a jar...and the cookies smell terrific coming out of the oven!

Cowboy Cookie Mix image

Steps:

  • Pour oats into a wide-mouth 1-qt. glass container with a tight-fitting lid. Combine flour, baking powder, baking soda and salt; place on top of oats. Layer with pecans, chocolate chips, brown sugar and sugar, packing each layer tightly (do not mix). Cover and store in a cool, dry place for up to 6 months. Yield: 1 batch. , To prepare cookies: Pour cookie mix into a large bowl; stir to combine ingredients. Beat in butter, egg and vanilla. Cover and refrigerate for 30 minutes. , Preheat oven to 350°. Roll into 1-in. balls. Place 2 in. apart on greased baking sheets. Bake 11-13 minutes or until set. Remove to wire racks to cool.

Steps:

  • Layer the ingredients in a 1 quart jar in the order given. Press each layer firmly in place before adding the next layer.
  • Include a card with the following instructions: Cowboy Cookie Mix in a Jar 1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. 2. In a medium bowl, mix together 1/2 cup melted butter or margarine, 1 egg, and 1 teaspoon of vanilla. Stir in the entire contents of the jar. You may need to use your hands to finish mixing. Shape into walnut sized balls. Place 2 inches apart on prepared cookie sheets. 3. Bake for 11 to 13 minutes in the preheated oven. Transfer from cookie sheets to cool on wire racks.

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Whisk together the flour, oats, coconut, pecans and baking soda in a medium bowl until combined.
  • Beat the butter, brown sugar, granulated sugar and salt in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs and vanilla and beat on high speed until creamy, about 3 minutes more. Add the flour mixture and mix on low speed, scraping the sides and bottom of the bowl with a rubber spatula to combine completely. Add the cornflakes and mix on low speed until evenly distributed.
  • Using a 1-ounce (2-tablespoon) scoop, arrange 12 scoops of cookie dough on the prepared baking sheet, leaving about 2 inches between each.
  • Bake until the cookies are lightly golden around the edges, 14 to 16 minutes. Let cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely. Let the baking sheet cool slightly, then continue baking with the remaining cookie dough.
