PEANUT NOODLES

A really easy recipe that tastes equally good served hot, warm, or cold. Good for a packed lunch. Fettuccini or spaghetti both work great!

Peanut Noodles image

Steps:

  • Cook pasta in a large pot of boiling water until done. Drain.
  • Meanwhile, combine oil and onions in a small skillet. Saute over low heat until tender. Add ginger; cook and stir for 1 to 2 minutes. Mix in peanut butter, soy sauce, water, vinegar, sugar, and red pepper flakes. Remove from heat.
  • Toss noodles with sauce, and serve.

8 ounces spaghetti
1 bunch green onions, sliced (white parts only)
2 tablespoons sesame oil
1 teaspoon minced fresh ginger root
⅓ cup peanut butter
¼ cup soy sauce
¼ cup hot water
1 tablespoon cider vinegar
1 teaspoon white sugar
¼ teaspoon crushed red pepper flakes

SUPER YUMMY PEANUT NOODLES

This is so easy and such a hit with kids! Compliments vegetables, chicken and tofu. I prefer to make this with crunchy peanut butter and whole wheat spaghetti. If you prefer more heat add more grated ginger or hot red pepper flakes to taste. I sometimes make an asian sauce on the side using the vinegar, soy sauce, sesame oil, ginger and garlic. Also powdered spices can be substituted. For very small children this can be made with simply peanut butter and water - they'll love it!

Steps:

  • Cook spaghetti according to package directions.
  • Place the other ingredients in a microwave safe bowl and microwave for 1 minute.
  • Stir hot peanut sauce with a fork until combined and glossy - aboout 1-2 minutes and if necessary thin with more water.
  • Combine with hot pasta and serve.

Delicious light sesame peanut noodles from Martha Stewart (Don't let this put you off, it is so easy and good you will want to try it). Though the recipe says serve room temperature or cold, we thoroughly enjoyed it hot.

Steps:

  • In a large pot of boiling salted water, cook spaghetti 3 minutes less than al dente. Add broccoli, bell peppers, and onion. Cook until pasta is al dente and vegetables are tender, 3 minutes more. Reserve 1/2 cup pasta water; drain pasta and vegetables.
  • Meanwhile, in a large bowl, whisk together peanut butter, sugar, vinegar, soy sauce, oil, garlic, and red-pepper flakes. Add hot pasta and vegetables; toss to coat, thinning sauce with a little pasta water, if necessary. Serve at room temperature or chilled.
