Steps:
- Chop garlic cloves on wooden surface then put in mortar and pestle.
- Add salt and olive oil and make a paste.
- Add this to the meat along with the Worcestershire and horseradish.
- Mix everything and adjust ingredients to suit your taste.
- When you make the patties place an indention in the middle of each one with your thumb (almost all the way through). This keeps the burgers from shrinking. We like ours thick and I like them to stay that way!
- Salt and Pepper according to taste when done.
- An added note on 04-03-06 - Thank you all for your positive feedback. It's nice to get confirmation on something I thought was good and different.
- Please note that I usually add more ingredients than what is called for above. I nuke a tiny hamburger (meatball size) and taste. I usually add more of everything. The horseradish does not taste like horseradish when cooked. It gives it a flavor note that otherwise wouldn't be there. Unless you are allergic to it, please try it.
VEGGIE OAT BURGER
A recipe gotten from the Micheff Sisters "Father's Day Special" on 3ABN.They say,"These patties are not only good in a sandwich, but they are great for an entrée too. I like to serve them with mashed potatoes and gravy. They are also nice to take on a picnic or put in your lunch, as they taste good hot or cold. They also freeze quite well." Steps:
- In a medium skillet, mix the onion, carrot, celery and zucchini with the 1 tablespoon extra-virgin olive oil. Sauté over medium heat until onion is clear. Remove from heat and add the brown rice, oats and seasonings. Mix well and add the tofu, With a fork, mash the tofu into fine pieces and mix well.
- In a small bowl, combine all the liquid ingredients and stir to mix. Pour over the rice mixture and stir until moistened and evenly mixed. Shape into 8 evenly-sized patties approximately 3 1/2 to 4 inches in diameter. Dredge each patty with bread crumbs, making sure to coat both sides.
- Place the patties on a baking sheet that has been sprayed with non-stick cooking spray, then spray the tops of each patty.
- Bake in a 375 degree oven for 15 minutes. Turn the patties over, spray the tops with the cooking spray and bake another 20 minutes. Remove from the oven and let them sit for 5 minutes.
- Serve with buns or by themselves with mashed potatoes and gravy. Enjoy!

OAT NUT BURGERS
from Simply Vegan by Debra Wasserman. I suggest that you use a food processor if you have one. If you don't, you can try to blend the ingredients in small batches in your blender. Otherwise, it is really hard to get the oats to stay together. I always use a food processor for this, although the original recipe doesn't call for it or even suggest it.

Steps:
- Mix the ingredients together and season to taste.
- Shape into 6 burgers (more or less depending on your tastes) and fry until brown, turning once.
- I like to throw the dry ingredients into a food processor for a more uniform texture.
- I also fry only what I need and keep the rest waiting for me in a tupperware for later.
- Garlic, salt and pepper are nice seasonings to add.
- NOTE: If you find that they are mushy inside, make your patties smaller or thinner. If you shape them too large or too thick then they won't cook right.

SPEEDY OATMEAL BURGERS
I've served these meatless burgers many times to guest. My guest were always surprised to find out they're meatless. I serve them, like you'd serve meatloaf. They're great with mashed potatoes

- Mix oatmeal salt, and sage. Add onion and eggs. Drop by large spoonfuls onto a hot non-stick skillet sprayed with cooking spray.
- Brown on both sides.
- Mix soup and water, pour over burgers. Cover, simmer on low for 20 minutes.

OPA! BURGERS - (WINNING ALTERNATIVE BURGER)
Steps:
- Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
- For the mayonnaise-cheese mixture:
- Combine the mayonnaise and roasted peppers in a small bowl and mix well. Cover and chill until ready to use.
- In a separate small bowl, mash the cheese with a fork. Stir in the olives; set aside.
- Pour the wine into a small, heavy fire-proof saucepan and heat on the grill until the wine begins to simmer. Remove from the heat and add the dried mushrooms, stirring with a fork to ensure that all the mushrooms are moistened. Set the mushrooms aside to reconstitute for at least 30 minutes.
- Gently squeeze the excess liquid from the reconstituted mushrooms and chop, using a chef's knife. Transfer to a large bowl. Add the lamb, garlic, oregano, red pepper flakes, salt, and pepper. Form into 6 equal patties in the shape of the rolls.
- When the grill is ready, brush the grill rack with oil. Place the patties on the grill, cover, and cook for 4 minutes. With a spatula, turn the patties over, and cook an additional 4 minutes, or until done to preference. During the last few minutes of grilling, place the rolls, cut side down, on outer edges of grill to lightly toast.
- To assemble the burgers, spread the mayonnaise mixture over the bottom roll halves and the cheese mixture over the top halves. Layer the bottom rolls with the patties, sopressata, spinach leaves, tomato slices, and roll tops.
OAT BURGERS WITH MUSHROOMS
Makes many, so I tend to make a big batch and freeze. Then I can pull out for a quick, delicious meal in seconds! Oatburgers lend themselves to many variations. Some further suggestions are dill, parsley, celery, green or red peppers in place of the mushrooms. Or simply use a variety of mushrooms for more complex flavor.

- Preheat oven to 350 degrees. Saute the first four ingredients in a covered saucepan. While they are sauteeing, bring to a boil all the other ingredients except the oats.
- Lower heat, add the sauteed vegetables, and add the oats, one cup at a time, allowing each cupful to sink a little before stirring gently. Cook up to five minutes--until mixture starts to stick to bottom of pot.
- Set aside to cool. It's much easier to form the patties if the mixture has cooled at least 10-15 minutes.
- Form into patties, place on oiled cookie sheet, bake at 350 degrees for about 45 minutes, turning once after about 20 minutes.
