Steps:
- Preheat oven to 375°F. Mix flour, oats, baking soda and cinnamon; set aside.
- Beat margarine, brown sugar and granulated sweetener in large bowl with electric mixer on medium speed until light and fluffy. Add egg, coffee granules and vanilla; mix well. Gradually add flour mixture, mixing until well blended. Stir in almonds. Drop heaping tablespoonfuls of dough, 2 inches apart, onto ungreased baking sheets.
- Bake 10 to 11 minutes or until lightly browned. Cool 1 minute; remove from baking sheets. Cool completely on wire racks.

COFFEE AND CREAM OATMEAL COOKIES
Classic soft and chewy oatmeal cookies with a hint of coffee and cream. The cream component is white chocolate chips. Who knew?! From Bake Your Day. The original recipe called for all white chocolate chips, I have taken the liberty to use half white and half dark chocolate. If you have a food scale, measure the sugars for accuracy.

- Preheat the oven to 325*F. Melt the butter in a glass bowl. Let the melted butter sit for 10 minutes to cool.
- In another bowl, whisk the oats, flour, coffee, baking soda, and salt together and set aside.
- Add the sugars to the melted and cooled butter and mix by hand(a wooden spoon works well) until well blended. Add the egg, egg yolk and vanilla and mix well. Add the egg/flour mixture and stir until incorporated. It will be tough but not to tough to complete by hand.
- Add the chocolate chips and stir. The dough will be stiff but still easy enough to mix by hand.
- Chill the cookie dough at least 30 minutes, preferably 1 hour, or up to 24 hours.
- To make jumbo cookies, use a large cookie scoop(2 3/4 oz.) to scoop the batter. Roll into a ball and repeat with the other dough.
- For smaller cookies, just use a regular size cookie scoop, or portion into 1 inch balls.
- Bake for 11-12 minutes(jumbo) or 10-11 minutes(regular sized). Allow the cookies to cool on the baking sheet; they will continue to cook a bit, so don't leave them in the oven too long(in fact, underbake them by a minute, they will set as they cool). Remove and cool completely on a wire rack.

- Heat oven to 350*. Spray 9" square baking pan with cooking spray. Place oats on baking sheet; bake 8 to 10 minutes or until lightly toasted. Cool.
- Process oats in food processor until very finely ground. Whisk oats, all purpose flour, whole wheat flour, baking powder, baking soda, 1 tsp of cinnamon, allspice and salt in large bowl.
- Beat brown sugar, eggs and oil in large bowl until blended. Beat in buttermilk and molasses until combined. Stir into dry ingredients until just blended. Stir in apples, 1/2 cup of walnuts and raisins. Spoon batter into pan. Combine remaining 1/2 cup walnuts, raw sugar and remaining 1 tsp cinnamon; sprinkle over batter.
- Bake 35 to 40 minutes or until golden brown and toothpick inserted in center comes out clean. Cool on wire rack. Serve warm or at room temperature.

OATMEAL COFFEE BREAD
This was originally Maple Oatmeal Bread tweeked with some hot brewed coffee. I got the idea from TOH. It turns a pretty golden brown.

Steps:
- In a bowl, combine the coffee, water, syrup, vegetable oil, oats, sugar and salt. Let sit for a couple of minutes until it cools slightly.
- In a large mixing bowl, dissolve yeast in warm water. Add the oat mixture, eggs and 2 cups of flour; mix well.
- Stir in enough remaining flour to form a soft dough.
- Turn onto a floured surface and knead until smooth and elastic about 6-8 minutes.
- Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled.
- Punch dough down. Trun onto a lightly floured surface, divide into two.
- Shape into loaves. Place in two greased 9 X 5 X 3" loaf pans.
- Cover and let rise until doubled.
- Bake at 350F for 40-45 minutes or until golden.
- Remove from pans to wire racks to cool.

- Grease 9x9" or 10x10" square baking pan.
- Preheat oven to 350°F.
- Mix oatmeal with boiling water, and place in fridge to cool.
- Beat together butter/margarine, white sugar, brown sugar, eggs and vanilla.
- Add in flour, baking soda and spices, beat well.
- Fold in oatmeal mixture.
- Bake for 50 minutes.
- Topping.
- Combine butter/margarine, brown sugar, egg and milk, mix well.
- Fold in coconut and walnuts till mixed well.
- This mixture will be runny.
- After the 50 minutes, spread topping evenly on cake and bake another 10 minutes at 350°F.

- Preheat the oven to 375 degrees F (190 degrees C). Spray a 10-inch square baking pan with cooking spray.
- Combine milk and vinegar in a glass to make sour milk; stir gently. Mash bananas in a small bowl to make 1 cup.
- Combine all-purpose flour, whole wheat flour, oats, baking powder, baking soda, and salt in a bowl.

- Preheat the oven to 375 degrees F (190 degrees C). Grease and flour a 9x12-inch baking dish.
- Mix brown sugar, pecans, butter, and flour together in a small bowl for streusel; set aside.
- Pour boiling water over oats in a bowl. Combine flour, baking powder, baking soda, and salt in a separate bowl.

- Mix flour, oats, baking sodaa, and cinnamon in a medium bowl. Set aside.
