PERFECT PINTO BEANS

Steps:
- Put the beans in a large bowl, cover with cold water and let soak overnight.
- Drain and rinse the beans, then put them in a large pot. Cover the beans with water and add the chili powder, cumin, paprika, cayenne, bacon, garlic, bay leaves, onion, bell pepper and some salt and pepper. Bring to a boil, then reduce the heat to low and cook until the beans are tender, 2 to 3 1/2 hours.
FEIJOADA (BRAZILIAN BLACK BEAN STEW)
This is my version of a traditional Brazilian black bean stew that maintains the rich smoky, flavors famous in Brazil. Additional meats, including sausage, may be added if desired. This is excellent served over brown rice.

- Heat the oil in a large pot or Dutch oven. Add 3/4 cup of chopped onion, green onions, and garlic; cook and stir until softened, about 4 minutes. Pour in the soaked beans and fill with enough water to cover beans by 3 inches. Bring to a boil, then reduce heat to medium-low, and simmer uncovered for 2 hours, or until tender.
- While beans are cooking, place ham hocks in smaller pot with 1/4 cup of the chopped onion. Cover with water and simmer, until meat pulls off of the bone easily, about 1 hour. Drain and add to the beans.
- Preheat oven to 375 degrees F (190 degrees C). Place ham, bacon, and remaining onion in a baking dish. Bake 15 minutes or until mixture is crispy.
- Drain the bacon and ham mixture, and add to the beans. Season with bay leaves, coriander, salt and pepper. Simmer uncovered 30 minutes more. Stir in chopped cilantro and parsley just before serving.

OKIE BEANS
My husband asked me to make beans when we first got married. He told me how and went to work looking forward to beans for dinner. Well he was very dissapointed. I was used to really thick baked beans...so...I poured out all the juice! This recipe is almost like soup. For those who like thicker beans just cut down on the water, but the beans will be thicker the next day. Ham shanks usually come in a package cut up into 2 or three portions. This is one of those recipes that you can tweak to suit your taste.

Steps:
- Put beans, onions, shank in a 3 quart dutch oven.
- Add water. More or less to taste.
- Add salt and hot sauce.
- Cover and place in a preheated 250 oven for 8 hours.
- Check after 4 hours and add water if needed.
- When ready to serve, take out ham shanks and remove bones.
- Shred meat with 2 forks and add back to beans.
- Serve with cornbread or homemade biscuits and fried taters.

SLOW COOKER BAKED BEANS

- Drain the beans, cover with fresh water and bring to a boil. Simmer for about 1 hour.
- Drain and rinse the beans, then transfer them to a slow cooker insert. Add the tomato puree, brown sugar, molasses, dry mustard, bacon, onion and 1 1/2 cups water and stir to combine. Cook on low until the sauce is thick and syrupy, 8 to 10 hours.
- Before serving, stir in the cider vinegar and season to taste with salt.

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream together butter, brown sugar and white sugar until smooth. Beat in eggs and vanilla. Combine flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats, chocolate chips, raisins, and pecans, one ingredient at a time. Drop by rounded spoonfuls onto the prepared cookie sheets.

- Rinse the beans thoroughly and pick out any little rocks or sticks that might have gotten packed into the bag along with the beans. Place them in a large pot with the bacon, and pour water over the top (1 or 2 inches above the beans). Bring to boil over medium-high heat, then reduce to low and cover. Simmer for 2 to 3 hours (mine took close to 3). If the liquid appears to be evaporating quickly, add more water as needed during cooking. The beans are done when they're tender but not mushy. Add in salt and pepper. Stir them up and add optional seasonings as desired.
- Preheat the oven to 450 degrees F. In a bowl, whisk together the cornmeal, flour, salt and baking powder. Measure the buttermilk and milk in a measuring cup. Stir in the egg with a fork. Add the baking soda and stir (it'll bubble a bit). Pour into the bowl with the dry ingredients and stir with a fork just until combined. In a small bowl, melt 1/4 cup shortening in the microwave. Slowly add the melted shortening to the batter, stirring just until combined. In an iron skillet over high heat, melt the remaining 2 tablespoons of shortening. Pour the batter into the hot skillet and spread to even out the surface. Cook on the stovetop for about a minute, then bake in the oven for 15 to 20 minutes, or until golden brown. The edges should be crispy.
