OLD FASHIONED POTATO CAKES

This is one of those recipes where the result is never quite the same, but always good. My grandma makes these for me whenever she has leftover mashed potatoes. She usually just puts in a bit of this and a bit of that, but I have tried to provide accurate measurements. Go ahead and make if you do not have quite the right amount of some ingredient.

Steps:

  • Spray a frying pan with Pam, and heat over medium.
  • Combine all ingredients.
  • Drop into patties into the pan.
  • Brown patties on both sides.
  • Serve hot.

Divide into 4 balls on a floured surface and flatten each into a 3-inch patty. Melt 1 1/2 tablespoons butter in a large skillet over medium-high heat; add the patties and cook until golden brown, 4 to 5 minutes per side, adding more butter to the pan as needed. Steps:

  • Peel and grate potatoes and onion, place in bowl and cover; set aside for 10 minutes.
  • Liquid will run from the potato/onion mixture.
  • Drain any liquid that forms.
  • Stir in the slightly beaten eggs.
  • Add flour, salt and baking powder and mix thoroughly.
  • On the stovetop, in a large heavy skillet, heat cooking oil on medium heat.
  • Drop potato batter into pan and flatten, (size is personal choice) and brown on both sides.
  • Cook for 5- 7 minutes on each side.
  • Drain on brown paper.
  • Serve with warm cinnamon applesauce or sour cream and chives.
