GERMAN OVEN PANCAKES
Watching this skillet-baked pancake magically puff up in the oven is almost as much fun as eating it.

- Preheat oven to 450°F. If you have a convection oven, set it at 425°F (the pancakes rise even higher on the convection setting).
- In a large bowl, lightly beat the eggs with a whisk or fork. Stir in the milk, melted butter, salt and sugar. Add the flour to the egg mixture, a big spoonful at a time as you continue to whisk. Be careful not to over-mix, to keep the pancake light and fluffy.
- Lightly spray a 9"-11" oven-safe skillet with cooking spray.
- Pour the batter into a heated skillet (this will yield a more golden brown, puffier pancake). Bake 12-18 minutes, just until the edges are golden. Check your pancake at the 12 minute mark. Top with the fresh fruit and whipped cream just before serving.

- Preheat oven to 425 degrees F (220 degrees C). In a small bowl, mix together white sugar and cinnamon; set aside.
- Place butter in a 9 inch cake pan and heat in the oven until melted. In a blender or food processor, whip eggs and milk. Pour in flour and beat until well combined. Pour batter into hot pan. Sprinkle on sugar and cinnamon.
- Bake in preheated oven for 20 to 25 minutes, or until puffed and golden. Dust with confectioners' sugar; serve warm.

- Sift flour, sugar, salt & nutmeg into mixing bowl.
- Beat eggs lightly with milk.

- Preheat the oven to 425˚ F.
- In a blender, combine the milk, eggs and vanilla and pulse to mix it well. Add the flour, baking powder, sugar and salt and blend until smooth, 25 to 30 seconds. Pour in half of the melted butter and pulse a few times to combine.
- Spread 2 tablespoons of the melted butter on a sheet pan, then pour in the pancake batter. Sprinkle the strawberries, chocolate chips and blueberries over the batter in three sections. Bake until golden on top, about 20 minutes.
- Brush the remaining 2 tablespoons melted butter over the surface of the pancake.
- Cut into squares and serve with butter and warm syrup!

- Combine dry ingredients together. Beat egg into milk and add to dry ingredients. Melt then cool the butter so you are not adding to your pancake mixture hot! Finish batter by stirring in vanilla.

OVEN PANCAKE
There are few things that are simpler to make than an oven pancake, but my oven pancakes always, always failed. Either they were undercooked, or dry, or burnt around the edges *yet* undercooked in the middle. I couldn't make an oven pancake to save my life, people. Until I discovered this recipe! I only made it because I had heavy cream that needed using, was feeling lazy so didn't want to make anything complicated, and was fully prepared to fail. But, lo and behold, a perfect, soft and fluffy pancake emerged from my oven! So simple, so good, so... successful! Load on the whipped cream and strawberries and enjoy.

- Preheat oven to 225°C Line a jelly roll pan with parchment paper.
- Lightly whip eggs: add milk, cream, sugar, vanilla sugar and salt, whip to combine.
- In a separate bowl, combine all-purpose flour and baking powder. Gradually add the flour mixture into the milk mixture, whisking continuously to avoid lumps from forming.

GRAMMA MOMO'S WW PANCAKES
This is my version of a great recipe that I found in my Mom's recipe book. It actually came from my grandmother Momo around WW2. My only real change was substituting applesauce for the oil. Feel free to try either way.

- Whisk whole wheat flour, baking powder, baking soda, and salt in a bowl. Mix in brown sugar, breaking it up into pea-sized pieces. Beat eggs in a separate bowl and stir milk, applesauce, and vanilla extract into eggs. Make a well in the dry ingredients and pour in the milk mixture; stir until just combined. If batter is too thick, add more milk.
- Grease a skillet or griddle with vegetable oil and place over medium-high heat. Scoop 2 tablespoons of batter onto the hot skillet and cook pancake until browned on the bottom and bubbles appear in the top, 2 to 3 minutes. Flip the pancake and cook until browned, 2 or 3 more minutes. Repeat with remaining batter.

- Preheat oven to 400 degrees. Whisk together milk, flour and salt until smooth. Add slightly beaten eggs and beat well. Melt the butter in a pie plate in the hot oven. When it is bubbling hot, using hot pads, tilt to cover the bottom and sides of the pie plate. Quickly pour in egg mixture and sprinkle with cinnamon.
- Bake for 15 minutes. The sides of the pancake will rise high over the rim of the pie plate, as pictured below. (Forgive the picture quality. The steam from the oven messed with my picture.) Serve hot from the oven with Orange Sauce. Enjoy!
- Whisk together sugar, cornstarch and salt and set aside. Combine water and orange juice concentrate in a medium saucepan over medium heat. Add dry ingredients to the saucepan. Cook, stirring constantly, until the sauce is clear and thickened. I am not the most patient of cooks, so I often raise the heat and just watch it closely. It turns out great every time.
