Steps:
- Preheat oven to 300 degrees F.
- Brush one side of each bread slice with olive oil and place them on a baking sheet in one layer. Season them with salt and pepper and dust them with the Parmesan. Bake until golden brown and crisp, about 15 minutes. Serve warm or at room temperature.

Steps:
- Put oven rack in upper third of oven and preheat oven to 400°F.
- Stir together cheese, mayonnaise, onion, and cayenne.
- Cut out 4 rounds from each bread slice using cutter and arrange on a baking sheet. Bake toasts until tops are crisp and just golden, 3 to 4 minutes. Cool toasts slightly on baking sheet on a rack. (Leave oven on.)
- Top each toast with a rounded 1/2 teaspoon cheese mixture, spreading to edge with a small offset spatula or knife. Bake toasts until topping is puffed and golden, about 6 minutes.
PARMESAN-BLUE CHEESE TOASTS WITH GREEN ONIONS

Steps:
- Combine mayonnaise, garlic, ground pepper, and cayenne pepper in medium bowl and whisk to blend. Mix in cheeses; season with salt. (Can be made 2 days ahead. Cover and refrigerate.)
- Preheat oven to 400°F. Brush 1 side of each bread slice with oil. Place oiled side down on large rimmed baking sheet. Bake bread slices until almost golden, about 5 minutes. Spread 1 generous tablespoon cheese mixture on each bread slice on sheet. Bake until cheese topping starts to bubble and toasts are golden at edges, about 10 minutes.
- Transfer toasts to large platter. Sprinkle with chopped green onions and serve warm.

- 1.Firstly roast brown bread on a non-stick pan.Meanwhile in a chopper add onions and parsley and grind to a paste.
- 2.Heat butter in a sauce pan and add the onion paste and saute for a min, add salt,oregano, white sauce and Parmesan cheese or mayonnaise and saute for another minute.
- 3.Take the roasted brown bread, spread the mixture on it and top it with grated mozzarella cheese.
- 4.Put the pieces of bread on a baking tray and bake it at 200 degree C preheated oven.
