LYNN'S "SICK" BROWNIES BITES

Steps:
- Preheat the oven to 375 degrees F. Coat an 8-by-8-inch baking pan with cooking spray.
- Combine the graham crackers, coconut, walnuts, condensed milk, chocolate chips and salt in a medium bowl. Stir with a wooden spoon until thoroughly combined. Transfer the mixture to the prepared pan and press to the edges.
- Bake until the chocolate melts and the top is golden, 15 to 20 minutes. Stir the hot mixture in the pan until the chocolate is incorporated throughout. Press back out to the edges and set aside until cool enough to handle.
- Spread the confectioners' sugar on a dinner plate. Scoop out the brownie mixture by the tablespoon and shape into balls. While still warm, roll each ball in the sugar to coat. The bonbons will keep, tightly covered, for 2 days.
ONION BLOSSOM BITES
Steps:
- Slice about 1/4 inch off the top of each onion and slice off just a little bit of the root end, making sure the root is still intact. Peel each onion. Using a paring knife, make a slice from the top of each onion into the center and down to about 1/4 inch above the root. Repeat the cuts going around the onion, spacing them out by 1/3 inch to form the "petals" of the blossom. Once all the cuts have been made, press down on the top of the onion with the palm of your hand to help separate the petals. Repeat with the remaining onions.
- Fill a medium heavy-bottomed pot with enough canola oil so it comes up the sides about 3 inches. Heat over medium-high heat to 350 degrees F.
- In a pie dish, whisk together the flour, cornmeal, paprika, onion powder, garlic powder and a generous pinch of salt and pepper. In a second pie dish, whisk together the milk and eggs. Working in batches, coat the onions in the egg wash, then dredge in the flour mixture, making sure the onions are coated and the flour mixture gets into all the crevasses of the onion "petals." Place on a plate.
- Fry the onions in batches until golden brown, 3 to 4 minutes. Drain on a paper towel-lined plate. Season with a bit more salt. Serve with Onion Blossom Sauce.
- Combine the mayonnaise, sour cream, hot sauce, horseradish, paprika, garlic powder and onion powder in a bowl and mix until blended.
ONION-BACON CRESCENT BITES

- Heat oven to 375°F Spray cookie sheet with cooking spray.
- In 6-inch skillet, cook bacon over medium heat 3 minutes. Add onion; cook 3 to 5 minutes or until tender. Remove from heat. Drain if necessary.
- In small bowl, stir cream cheese until smooth. Add bacon mixture, Cheddar cheese, parsley, paprika and caraway seed; mix well. Set aside.
- Separate dough into 4 rectangles; press perforations to seal.
- Spoon 1/4 of bacon mixture onto each rectangle; spread to within 1/2 inch from 1 long side.
- Roll up each rectangle, starting with topped long side and rolling to untopped side. Press edge to seal.
- With serrated knife, cut each roll into 8 slices. Place cut down side on cookie sheet.
- Bake 15 to 20 minutes or until golden brown. Serve warm.

Steps:
- Combine cream cheese, bacon, onion and worcestershire.
- Separate crescent rolls into 8 triangles.
- Cut each triangle in half lengthwise.
- Spread one generous teaspoon of the cream cheese mixture on each triangle.
- Roll up, starting at the shortest side of triangle and rolling to the opposite point.
- Place on an ungreased cookie sheet.
- Bake at 375 degrees for 12-15 minutes or until golden brown.
- Serve warm.
ONION BURGERS
Early in the writing of this book, I struggled to get my ruminations on paper. Although I hesitate to call my temporary impasse writer's block, I can't imagine much worse. Words wouldn't come. And the ones that did weren't smart or engaging or funny. After an eternity of fretting, I began making burgers for lunch. My intent was to cook my way through the recipes I planned for the book. This onion burger was the first thing I tried. After 2 days of oniony repasts, the dark cloud lifted and the words came.

- Place a heavy skillet over medium-high heat. Leave it there for 5 minutes. Loosely gather a handful of ground beef and slip it into the pan. Repeat 6 times. The burgers should be freeform lumps.
- With the side of a spatula, push the burgers into a semblance of a round. After about a minute, pile on all the onions and then, with as much force as you can manage, smash the onions into the meat. Again, work the sides of the patties into a semblance of a round. Cook another minute and then flip. Season with salt. Smash the burgers again, hard.
- Place burger on bottom half of the bun and spread with mustard. Spread the cheese on top half of the bun and place on the burger.
BACON CRESCENT BITES

Steps:
- Rinse sauerkraut and squeeze dry; mince by hand or in food processor.
- Mix in Thousand Island dressing; set aside.
- Separate each can of crescent rolls into 4 rectangles; roll out on a lightly floured board and cut each evenly into 4 rectangles (16 per tube of crescent rolls).
- The rectangles should be wide enough to lay a cocktail sausage across the short end and leave a slight overlap, so you might need to pat each one a little with your fingers to make wider.
- On each rectangle, place about 1 scant teaspoon of the sauerkraut mixture then sprinkle with a little cheese.
- Top with a cocktail sausage.
- Roll up, tucking ends in; pinch ends to seal.
- Place on an ungreased baking sheet and bake at 350° for about 10 to 15 minutes, until golden brown.
- Makes 32 bite-sized appetizers.
