All eyes will definitely be on these adorable cookies when they're set on any buffet table. I created them for my son's kindergarten class for Halloween. -Sherry Lee, Columbus, Ohio

Steps:
- In a microwave, melt 4 ounces of white chocolate; stir until smooth. Dip vanilla wafers in melted chocolate; allow excess to drip off. Place on a waxed paper-lined baking sheet. Chill until set., Melt remaining white chocolate; stir until smooth. Tint as desired. Spread a small amount onto the center of each cookie; place a chocolate chip in the center. , For bloodshot eyes, use a toothpick dipped in red food coloring to draw lines from circles to outer edges of wafers. Chill until set. Store in an airtight container.

- Heat oven to 375° F. Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.
- Shape dough into 1-inch balls. Roll in granulated sugar, if desired; place on ungreased cookie sheet.
- Bake 8 to 10 minutes or until lightly browned. Remove from cookie sheet to wire rack. Cool completely.
- Frost center of cookie with vanilla frosting to form white portion of eye. Decorate with red and black frostings to form outline of eye and bloodshot markings. Press malted milk ball "iris" into center of eye. Makes about 48 cookies.

- Preheat oven to 160°C (fan forced). Grease and line a 16cm x 26cm brownie tin with baking paper allowing 2cm of baking paper to extend beyond the sides of the tin.
- In a large bowl, combine sugar, cocoa powder and salt. Mix to combine and then gradually stir in melted butter. Add eggs, Vanilla Bean Paste and Black Food Colour Gel, mixing until just combined. Sift together flour and baking powder and add to mixture, mixing until just incorporated.
- Pour batter into prepared tin, spreading evenly. Bake for 30 minutes. Allow to cool completely in tin before using a flat based cup to press the brownie down to forming a flat fudgy base for the marshmallow.
- Place ½ cup of water in the bowl of a stand mixer fitted with a whisk attachment and sprinkle over gelatine. Set aside.
