SWEET AND SOUR DIPPING SAUCE
A great sauce for dipping almost any Asian inspired dish in! Should you desire a thicker consistency than what this recipe yields, dissolve another 1/4 teaspoon of cornstarch in 1/8 to 1/4 cup of cold water. Once dissolved, stir the mixture into the sauce and continue to heat and whisk until sauce thickens.

I've yet to master the art of lumpia making, but I can make a wicked batch of lumpia dipping sauce. ;) This sauce is the standard condiment with a serving of lumpia (whether they are homemade or purchased in a restaurant and I've eaten an embarrassingly unfair amount of those delicious Filipino eggrolls in my lifetime.) One thing I truly miss about Southern California was easy access to lumpia. From Sunset's International Cooking. Good on won tons, fried rice, dim sum, etc. Posted here for safekeeping.

Steps:
- In a 2-quart sauce pan combine all ingredients.
- Stir ingredients together well until the cornstarch is completely incorporated and there are no lumps.
- Place pan over medium heat and cook; stirring constantly with the whisk until the mixture boils and thickens slightly.
- Set aside to cool to room temperature.
LUMPIA
This makes crispy lumpias that leave the plate as soon as you make them. This recipe is from the food network courtesy of Carlita Domingo. It also includes recipes for two dipping sauces. If you plan to freeze these do not use wonton wrappers as they will stick together. My wrappers also suggest using an egg white mixed with 1 tablespoon of flour to seal the wrappers.

Steps:
- Heat oil in skillet and saute garlic and onions until tender. Add pork and saute until browned. Add vegetables and cook until tender, yet crisp, about 5-10 minutes. Remove from heat. Season with soy sauce. When mixture is cool, add bean sprouts. Salt to taste.
- To assemble lumpia: Carefully separate wrappers. To prevent them from drying out, cover unused wrappers with moist paper towel. Lay one wrapper on clean surface. Place about 2-3 tablespoons of the filling near the edge closest to you. Roll edge towards the middle. Fold in both sides and continue rolling. Moisten opposite edge with water to seal. Repeat with other wrappers. Lumpia can be frozen until ready to use.
- Deep fry at 350 degrees until golden brown, about 3-5 minutes on each side. Drain on paper towels. Serve with sweet sour or vinegar and garlic dipping sauce.
- Vinegar Dipping Sauce: Mix together all ingredients and let sit for 1/2 hour. Makes 1/2 cup.
- Sweet and Sour Sauce: In a small pan combine vinegar, soy sauce, ketchup, water, sugar and salt, and boil for 2 minutes. Thicken with cornstarch mixture. Makes 1 1/4 cup.

These are the real deal! They take some time but they are well worth it. I usually get together with a few friends and we make large batches and freeze them.

- Cook pork in skillet till done. Drain and Set aside. In non stick skillet sauté finely chopped veg. (Do not add any oil or water when cooking veg.) Mix ground pork with veg. Add lots of Garlic Powder and some pepper. Cut Lumpia Wrappers in half diagonal. Place some filling in center of wide end of wrapper, fold sides over and roll into egg roll shape. Seal point with mixture of cornstarch and water. (Form a glue substance) Fry in cooking oil on high heat till brown.
- May be made ahead and frozen, no need to thaw them just fry them frozen. Yield 50.
- I have started drizzling them with olive oil and baking them at about 450 degrees until brown and crisp.
- Sauce:.
- Pour Vinegar, Water & Sugar in pot DO NOT STIR cook on low heat till blended. Wait 5 minute then add Soy Sauce & Ketchup Stir. May add cornstarch to thicken. Store in jar on shelf do not refrigerate.

SWEET AND SOUR DIPPING SAUCE
I came up with this recipe for dipping homemade egg rolls (try recipe #113223) in but we have also used it to dip chicken tenders. It is so easy to make and takes no time at all. Much cheaper then buying the bottled sweet and sour sauces and it tastes better. Try adding some finely diced green bell pepper to the sauce for a more "in depth" flavor. I prefer it without the bell pepper, but others like it. Serve it warm or cool. (Multiply the recipe and use in sweet and sour meatballs if desired)

- Combine the rice vinegar, sugar, ketchup, soy sauce and water in a small bowl, stirring to dissolve the sugar. Set aside.
- Heat a small, heavy saucepan. Add the oil and swirl to glaze the bottom of the pan. When the oil is hot enough to sizzle a piece of garlic, add the garlic and ginger and stir gently until fragrant, 10 to 15 seconds, adjusting the heat so they sizzle gently without browning. Add the sugar mixture, stir to blend, then raise the heat to bring the mixture to a bubbly simmer, stirring.
- Reduce the heat to medium-low; stir the cornstarch and water to recombine it and add it to the pan. Stir until the mixture thickens and becomes glossy, about 20 seconds. Turn off the heat and cover the pot to keep the sauce warm until ready to serve. The sauce can be made ahead, stored in the refrigerator and then reheated.
