TOASTED BEAN AND CHEESE OPEN-FACED SANDWICHES ("MOLLETES")

Steps:
- Preheat a broiler.
- Drain the beans in a colander set over a bowl. Save the bean liquid.
- Heat the oil in a heavy skillet over medium heat. Add the garlic and onion and saute until the onion is soft, about 5 minutes. Add the drained beans. Using a potato masher, mash the beans until they become a spreadable mixture, adding extra bean liquid, if needed.
- Put the rolls on a baking sheet and broil until lightly golden, about 3 minutes. Spread each half of the rolls with about 1/2 cup of the refried beans. Top with shredded cheese. Return to the oven and broil until the cheese is melted and starting to bubble. Transfer the rolls to a serving tray and serve.
- Combine the beans, garlic, onion, and bay leaves in a medium pot. Add enough water to reach about 1 1/2 inches over the beans. Bring to a boil over medium-high heat. Reduce the heat, cover, and simmer until the beans are tender, about 2 hours. Add more water if the beans are absorbing too much liquid. The beans should be soupy when done, with plenty of liquid remaining. Season the beans with salt and pepper, to taste.
- Ladle the beans and cooking liquid into soup bowls and garnish with Mexican crema, cilantro and chopped white onions. Alternatively, the beans can be drained and use as a filling for soft tacos.

- Heat a griddle over medium heat.
- Spread cut sides of bread with fig jam. On the bottom half of the bread, layer 1/2 the cheese, then the ham, the figs, and the remaining cheese. Enclose with the top half of the bread. Brush with rosemary oil. Place on griddle or in a nonstick skillet, and weight top of sandwich with a heavy skillet or a foil-lined brick. Cook until bottom is golden, about 4 minutes. Flip sandwich over, and repeat with opposite side. Cut crosswise into 6 to 8 pieces; serve immediately.

- Brush English muffins with butter; set aside. In a bowl, combine the crab, shrimp, 3/4 cup cheese, celery, olives and parsley. Combine the mayonnaise, lemon juice, mustard and Worcestershire sauce; pour over seafood mixture and toss to coat. , Place a rounded 1/4 cupful of the mixture on each muffin half; sprinkle with remaining cheese. Steps:
- Combine the figs and 1 cup water in a small saucepan; bring to a boil.
- Cook, covered, over low heat for about 20-25 minutes or until almost all of the water has been absorbed; cool slightly.
- Transfer the figs to the container of a food processor; process until chunky smooth.
- Transfer the "jam" to a plastic container with a tight-fitting lid, and refrigerate until ready to use.
- Preheat the broiler.
- Lightly toast the bread on both sides.
- Spread one side of the bread with a thick layer of the fig jam.
- Use a sharp knife or a cheese plane to cut off thick slivers of cheese, and lay them on top of the jam.
- Place the sandwiches on a pan and heat under the broiler until the cheese is soft and bubbly (about 1-2 minutes).
- Cut into pieces and serve immediately.
