ORANGE CHERRY DELIGHTS
I made these for my co-workers and now I can't keep up with the demand!

Steps:
- soften the butter in the microwave til it's just about to melt
- mix the cake mix, pudding mix well
- add the eggs and Tbs water, mix well
- add the butter and incorporate all ingredients until dough is soft and smooth
- make sure the dehydrated cherries are chopped at least in half. Leaving them whole is a bit much. Smaller pieces if you prefer. Add to dough
- Add pecans and stir until cherries and pecans are well incorporated through out the dough
- drop by spoonfuls onto parchment paper lined cookie sheets
- bake 11 minutes and remove immediately whether they look done or not. they will continue to cook from the heat of the cookie sheet for another 2 - 3 minutes
- Let cool on a wire rack

- STIR boiling water into dry gelatin mix in medium bowl at least 2 minute until completely dissolved. Stir in cold water. Refrigerate 1-1/4 hours or until slightly thickened (consistency of unbeaten egg whites). Reserve a few orange segments for garnish. Gently stir remaining orange segments into gelatin; set aside.
- BEAT cream cheese and sugar in separate medium bowl with wire whisk until well blended. Stir in whipped topping. Spoon into 2-1/2-qt. serving bowl; cover with gelatin mixture.
- REFRIGERATE 2 hours or until firm. Top with the reserved orange segments. Store in refrigerator.

- In a bowl, combine the graham cracker crumbs, confectioners' sugar and butter. Press onto the bottom of an 8x4-in. loaf pan coated with cooking spray. , In a small bowl, beat cream cheese and confectioners' sugar until smooth; fold in whipped topping. Spread over crust. Spoon pie filling over top. Refrigerate for 1 hour or until chilled.

Steps:
- 1. In a bowl all jello and boiling water; stir until dissolved. Add cold water and stir. Refrigerate until it starts to set.
- 2. To the partially set jello add oranges; stir gently, set aside.
- 3. In mixer, beat cream cheese and sugar; add cool whip and beat until mixed. Spoon cream cheese mixture on to the bottom of a 8x8 baking dish; smoothing the mixture out evenly. Pour jello mixture over the cream cheese. Refrigerate until firm.
