CHOCOLATE ICE CREAM
Steps:
- Place the cocoa powder along with 1 cup of the half-and-half into a medium saucepan over medium heat and whisk to combine. Add the remaining half-and-half and the heavy cream. Bring the mixture just to a simmer, stirring occasionally, and remove from the heat.
- In a medium mixing bowl whisk the egg yolks until they lighten in color. Gradually add the sugar and whisk to combine. Temper the cream mixture into the eggs and sugar by gradually adding small amounts, until about 1/3 of the cream mixture has been added. Pour in the remainder and return the entire mixture to the saucepan and place over low heat. Continue to cook, stirring frequently, until the mixture thickens slightly and coats the back of a spoon and reaches 170 to 175 degrees F. Pour the mixture into a container and allow to sit at room temperature for 30 minutes. Stir in the vanilla extract. Place the mixture into the refrigerator and once it is cool enough not to form condensation on the lid, cover and store for 4 to 8 hours or until the temperature reaches 40 degrees F or below.
- Pour into an ice cream maker and process according to the manufacturer's directions. This should take approximately 25 to 35 minutes. Serve as is for soft serve or freeze for another 3 to 4 hours to allow the ice cream to harden.
ORANGE CREAM POP SUNDAE
Steps:
- Divide the ice cream among 4 bowls. Top the ice cream with the Orange Magic Chocolate Sauce; wait 30 seconds for the sauce to harden. Garnish each dish with 3 Chocolate-Dipped Clementine Segments and a sprig of mint.
- Set up a double boiler by placing a small bowl over a small pot with a little bit of water, making sure the water does not touch the bottom of the bowl. Heat the pot over low heat and bring the water to a very light simmer.
- Combine the coconut oil, corn syrup, zest and food coloring in the bowl. Warm over low heat until the oil is melted. Allow the zest to steep in the oil for a few minutes. Turn off the heat, add the chocolate and let sit until the chocolate begins to melt. Whisk until well combined and smooth. Pour the sauce over your favorite ice cream and it will harden within 15 to 30 seconds.
- Line a baking sheet with parchment paper or a silicone baking mat.
- Set up a double boiler by placing a small bowl over a small pot with a little bit of water, making sure the water does not touch the bottom of the bowl. Heat the pot over low heat and bring the water to a very light simmer.
- Put the chopped chocolate in the bowl and heat, stirring occasionally, until melted. Remove from the heat.
- Carefully dip half of a clementine segment into the melted chocolate, letting the excess chocolate drip off. Place on the prepared baking sheet and sprinkle lightly with the sea salt. Repeat with remaining clementine segments. Let set about 30 minutes.
ORANGE CRUSH (SODA POP) ICE CREAM
My grandmother always made Orange Crush ice cream when we came to visit her in the summer. It holds many fond memories from my childhood. A friend gave me this recipe and I wanted to save it just in case I lose it again!

- Ice Cream Freezer method:.
- Mix ingredients well. Add to the ice cream freezer container. Freeze according to manufacturers directions.
- Store leftovers in the freezer.
- Refrigerator - Freezer method:.
- Combine the ingredients in a large bowl.
- Turn into 13x9 inch baking pan.
- Freeze to a firm mush, about 1 hour.
- Break into pieces and turn into a large mixing bowl.
- Beat until smooth, then return to the pan, and cover.
- Freeze until firm.

ORANGE DREAMSICLE ICE CREAM

- Line a mesh sieve with a coffee filter. Pour yogurt into sieve and allow yogurt to drain over a measuring cup in the refrigerator until about 1/2 cup whey is collected, about 8 hours.

ORANGE ICE CREAM SODA
Summer is coming and its time to start looking for new and unique drinks to try. Here's a twist on an old favourite. You can also use Meyer lemon or ruby red grapefruit juice with this recipe. (Also you could substitute the juice for your favourite lemon, orange or grapefruit liqueur or soda).

- Rub orange juice on the edge of glass and then place the glass in white sugar to rim glass.
- Set the prepared glass in freezer to chill until needed.
- Next dissolve the 4 tsps of sugar in 6 tbsp of orange juice.
- Pour the orange mixture into the prepared glass.
- Add the club soda and top with ice cream.
- Pour the remaining orange juice and sugar (if any - from rimming the glass) over the ice cream and garnish glass with an orange slice.
- Serve with a straw and a spoon, enjoy immediately.
- *Please use the same measurements for liqueurs as for juice.

ORANGE SODA ICE CREAM (ELECTRIC ICE CREAM MAKER)
This is one of my favorite homemade ice creams. It is super easy and tasty. I have had this several times since I was a young boy but have never made it myself. The Eagle Brands website calls for 20 oz Orange Soda rather than 2 Liters. I am pretty sure we used a 2 qt Ice cream churn and most likely did not put the whole 2 liters in the recipe. Also they call for 2 teaspoons of Orange Extract. You can also make this with other flavors.

ORANGE ICE CREAM
Steps:
- Grate the zest of all the oranges, taking care to take only the orange zest but none of the white pith. Squeeze the juice from the oranges until you have 2 1/2 cups of juice, and reserve the other oranges for another use. Combine the orange juice with the lemon juice and set aside.
- In a medium, heavy saucepan, combine the cream, half and half, and orange zest and bring to a boil over medium high heat. Remove from the heat.
- In a large mixing bowl, combine the egg yolks and sugar and whisk until the mixture is pale yellow and thickened. Whisking all the time, pour in the hot cream mixture. Whisk until well combined and then stir in the citrus juices and vanilla. Strain into a large, flat container and chill until cold. Freeze in an ice cream maker according to the manufacturers instructions. Store in the freezer for up to 2 days, if desired.
EASY ICE CREAM (FOR ELECTRIC ICE CREAM MAKER)
This is a quick, easy treat my family's always made. Chocolate chips, pineapple, strawberries can be added to the mix the last 5 minutes.

CINNAMON ICE CREAM (FOR ELECTRIC ICE CREAM MACHINE)
This recipe was posted in answer to a message board request. It was one of many recipes that came with my ice cream machine. Cinnamon ice cream is yummy on warm apple pie, baked apples, bread pudding or just in a bowl by itself, on a hot night. Freezing time for this recipe is 30 minutes in my electric ice cream machine. Time may vary according to the manufactures directions for your ice cream maker. Cook/Prep times do not include the 1 to 2 hour chilling time needed before processing/freezing the cooked mixture. Note: The egg yolk gives the finished product a better texture.

- Lightly beat egg yolk (if using).
- Stir in sugar and 1/2 cup of half& half (if not using the egg yolk, just combine the sugar and 1/2 cup of half& half) in a saucepan.

- Whisk cooked mixture together with remaining ingredients.
- Cool and chill mixture for a few hours (1-2 hours).
