BANANAS FOSTER CRUNCH CAKE

This is a deliscious cake! Not too difficult recipe, just enough to keep it interesting. I hope you'll try it and enjoy it as much as we do.

Bananas Foster Crunch Cake image

Steps:

  • Preheat oven to 350°.
  • Beat 1/2 cup butter at medium speed with an electric mixer until creamy; gradually add sugar, beating well.
  • Add eggs, one at a time, beating after each addition.
  • Stir in mashed bananas, rum and vanilla extract.
  • Combine 1 1/2 cups flour and next 4 ingredients; add to the butter mixture, mixing until blended. Pour into prepared tube pan; set aside.
  • Combine 1/2 cup flour and remaining ingredients;; sprinkle over batter, Bake for 55 minutes, or until a wooden toothpick inserted into center of cake comes out clean. Cool in pan on a wire rack for 10 to 15 minutes; remove from pan and let cool completely on wire rack.

Steps:

  • Place the first 4 ingredients in a large microwave-safe bowl. Place butter, brown sugar and cinnamon in a small microwave-safe bowl; microwave on high for 2 minutes, stirring once. Stir in extracts. Pour over cereal mixture; toss to coat., Microwave cereal mixture on high for 3 minutes, stirring every minute. Spread onto baking sheets to cool. Store in an airtight container.

  • Preheat oven to 350°F (175°C). Line the bottom and the sides of a 9" (23cm) springform pan with parchment paper.
  • Melt butter in a medium saucepan over medium heat. Add sugar, vanilla, cinnamon, and rum and bring to a simmer. Stir regularly. Cook for about 2-3 minutes until it's getting thicker and is coating the back of a spoon. Pour over bananas evenly. Set aside.
  • In a large mixing bowl, using a handheld or stand mixer fitted with a paddle or whisk attachment, stir eggs, brown sugar, oil, mashed bananas, rum, and vanilla* on medium speed until smooth and well combined for about 2 minutes. Stir in flour, baking powder, and salt just to combine. Pour the batter on top of the bananas evenly. Put into the oven with a piece of parchment paper underneath the baking pan. Bake for about 25-28 minutes or until a toothpick centered in the middle comes out clean. Let cool to room temperature.

  • Preheat oven to 425°F. Place bananas (in peel) on a parchment paper-lined baking sheet, and bake in preheated oven until peel is very dark and just starting to split open, 20 to 25 minutes. Let bananas cool completely, about 20 minutes. Remove and discard peels. Mash bananas in a small bowl to measure 1 1/2 cups. Save any remaining mashed bananas for another use or discard.
  • Reduce oven temperature to 350°F. Coat 2 (9-inch) round cake pans with baking spray. Beat 1/2 cup of the butter with a stand mixer fitted with paddle attachment on medium speed until creamy, 2 to 3 minutes, stopping to scrape down sides of bowl as needed. With mixer running on medium speed, gradually add brown sugar and granulated sugar, and beat until creamy, about 5 minutes, stopping to scrape down sides of bowl as needed. Add eggs, 1 at a time, beating until just combined after each addition. Beat in vanilla and 1 1/2 cups reserved mashed bananas on low speed until just combined.
  • Whisk together flour, baking powder, baking soda, cinnamon, and 1/2 teaspoon of the salt in a medium bowl. With mixer running on low speed and beating until just combined after addition, add flour mixture to banana mixture, alternately with buttermilk, beginning and ending with flour mixture. Pour batter evenly into prepared pans, and spread in an even layer.
  • Bake in preheated oven until a wooden pick inserted in center comes out clean, 23 to 28 minutes. Transfer pans to wire racks, and cool 10 minutes. Remove from pans, and cool completely on wire racks, about 1 hour.
