- In a large bowl, cream shortening and sugar until light and fluffy. Beat in the buttermilk, eggs, orange juice and zest. Combine the dry ingredients; gradually add to the creamed mixture and mix well. , Drop by teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 10 minutes or until lightly browned. Remove to wire racks to cool. , For icing, combine the confectioners' sugar, orange extract and enough orange juice to achieve desired consistency. Spread over cooled cookies.

WHITE CHIP ORANGE COOKIES
Steps:
- PREHEAT oven to 350°F.
- COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar and brown sugar in large mixer bowl until creamy. Beat in egg and orange peel. Gradually beat in flour mixture. Stir in morsels. Drop by rounded tablespoon onto ungreased baking sheets.
- BAKE for 10 to 12 minutes or until edges are light golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

- Heat oven to 180C/160C fan/gas 4. Cream the butter and sugar together until well blended and smooth. Gradually beat in the banana, vanilla extract and egg. Add the zest. Mix well with a wooden spoon until thoroughly blended.
- In a large bowl, mix the flour, salt, baking powder, oats, coconut, walnuts and sultanas or chocolate chips. Stir the dry ingredients into the wet and mix thoroughly until a thick dough is formed. Line a baking sheet with parchment. Drop heaped tbsps onto the sheet, leaving a 5cm (2in) space around each one, and press down lightly. Bake for 15-20 mins until lightly browned. Cool.

CHOCOLATE ORANGE COOKIES

- Beat the butter with an electric whisk until it is light and fluffy, then beat in the icing sugar a little at a time, adding the orange zest and 1 tbsp orange juice. Beat in the flour and cocoa a little at a time, then mix in the chocolate and orange peel and 1-2 tbsp milk.
- Divide the mixture into two, pat each into a rough log shape on a piece of non-stick wrap or baking parchment, then use the wrap to help you shape each piece into a log around 15cm long. Chill until firm, about 2 hrs (see tip, below).
- Heat the oven to 180C/160C fan/gas 4. Line two baking sheets. Cut ½cm-thick cookies from the dough and lay them on the baking sheets, leaving space so they can puff up and spread. Put a piece of sugared candied orange on top of each. Bake for 10-15 mins or until the cookies are puffed. Cool on the sheets for a couple of mins before sliding them onto a wire rack. Will keep for two to three days in an airtight container.

SUNSHINE ORANGE COOKIES
These are my favorite orange cookies. They are different from most recipes because they call for orange juice concentrate rather than just orange juice. They pack alot of pure orange flavor and are frosted with an orange buttercream frosting. Sunshine in a cookie!

- Add rest of ingredients and mix well.
- Drop by rounded spoonfuls on a greased baking sheet. Bake at 400* for 8-10 minutes or until just barely browned around the rim. Allow to cool; then frost.

- Cream sugar and butter together.
- Add orange juice and zest; blend well. I start with the smaller amount than add more to increase orange flavor to desired level.

ORANGE-CHOCOLATE COOKIES

- In a large mixing bowl, beat butter with electric mixer on medium to high speed for 30 seconds. Add sugar. Beat until combined, scraping sides of the bowl occasionally. Beat in egg yolk and orange peel. Beat in as much flour as you can with the mixer. Stir in any remaining flour.
- On a lightly floured surface, roll dough to 1/2 inch thickness. Using a 1 1/2-inch round cookie cutter, cut into rounds. Press your thumb into center and fill with 1/4 teaspoon orange marmalade.
- Bake on parchment-lined baking sheets in a 375-degree oven for about 12 minutes or until edges are lightly browned. Transfer to a wire rack and let cool. In a small saucepan, melt chocolate and shortening over low heat. Dip half of each cookie in chocolate mixture. Place cookies on rack to set.

ORANGE COOKIES
These traditional Italian cookies are as easy as it gets, and everybody loves them. The citrus flavoring renders them inviting, and most likely you have had them at Italian family celebrations such as weddings, confirmations, and baptisms. Not too sweet, these cookies will keep for a week or two in a cookie container.

Steps:
- Sift together the flour, baking powder, and salt into a bowl. Cream the butter and sugar in a mixer fitted with the paddle attachment on medium speed until light and fluffy, about 2 minutes. Crack in the eggs, one at a time, beating well between additions. Pour in the vanilla, the juices, and the zest, and beat to combine. Turn the mixer off, pour in the flour mixture, and mix on low just to combine. Wrap the dough in plastic, and let rest in refrigerator 1 hour.
- Roll the dough into four logs, about 1 1/2 inches in diameter and 10 to 12 inches long. Chill or freeze the logs for 20 minutes, until firm enough to cut without losing their shape.
- Preheat the oven to 350 degrees F. Cut the logs into 1/2-inch rounds, and place on parchment-lined baking sheets. Place in oven, and bake until the cookies are golden, about 15 minutes. Remove, and cool the cookies completely on wire racks.
- To glaze the cookies: Sift confectioners' sugar into a bowl, and whisk in the orange juice to make a smooth glaze. Dip a cookie in the glaze; it should stick to the cookie in a thin layer. If not, adjust the consistency of glaze with more juice or confectioners' sugar. Dip the top of the baked cookies in glaze, and let dry on wire racks.

ITALIAN ORANGE COOKIES

Steps:
- Preheat oven to 350°F.
- Cream the shortening then beat in the juice, sugar, orange extract and orange zest (mixture will appear curdled) until well combined. Blend in the eggs and beat well.
- Mix in all of the baking powder and flour, 1 cup at a time, blending well. Once you've added 6 cups of flour, add the remaining flour just until mixture can be rolled into a ball (batter will be sticky).
- Refrigerate the dough covered for several hours or even overnight.
- Fill a low dish with sifted icing sugar. Using a small cookie scoop. scoop several balls of the cold dough into a plate. Roll the cookies into a smooth ball then roll in the icing sugar. Place the cookies on an ungreased cookie sheet, about 2 " apart.
- Bake for 12 - 15 minutes, rotating the baking trays half way through the baking process. Do not overbake, cookies should be light in colour.
