ORANGE DROP COOKIES

From the 1963 Betty Crocker Cooky Book. These are a cake-like cookie. For variety, add 1/2 cup of chopped nuts, raisins or chocolate chips. I used chocolate chips because I enjoy the taste of chocolate and orange together.

Steps:

  • Heat oven to 400F/200°C.
  • Mix together flour, baking powder, baking soda and salt. Set aside.
  • In another large mixing bowl, mix butter, sugar and egg thoroughly. Stir in orange juice and rind.
  • Sift dry ingredients into wet ingredients and blend together.
  • Drop rounded teaspoonfuls of dough about 2" apart on ungreased baking sheet.
  • Bake 8-10 minutes or until delicately browned on edges.
  • Remove from cookie sheets and cool completely. Store in an airtight container.

ORANGE DROP COOKIES I

This recipe is from my great grandmother. I entered these in our County Fair. There were over 60 entries in the drop cookie category. I received 2nd place. Pretty darn good, huh? My great grandmother would have been so proud. You can make sour milk by combining 1/2 cup of milk with 1 teaspoon vinegar and allow to set 10 minutes.

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Lightly grease cookie sheets.
  • In a medium size mixing bowl, mix together 3 teaspoons baking powder and 3 1/4 cups flour.
  • Beat together brown sugar and shortening then add eggs, orange rind and vanilla. Mix in flour mixture, alternating the flour mixture and sour milk until all is blended. Drop dough by teaspoonful onto cookie sheets.
  • Bake 12-15 minutes. Let cool and frost cookies.
  • To Make Frosting: Mix together powdered sugar, 1 teaspoon butter and enough orange juice mixed in to make it able to spread over cooled cookies.

Found the original in The Washington Post who attributed the Ghirardelli Chocolate Cookbook. In homage, consider using Ghirardelli chocolate for this recipe. Whatever chocolate you use, use block chocolate, not morsels. ****dough needs 30 to 60 minute minimum chill in the fridge (good for making the day before)**** These turned out to be the star on the Christmas platters. Chocolate-Dipped Orange Cookies image

Steps:

  • For the dough: Combine the confectioners' sugar and butter in the large bowl of a stand mixer or hand-held mixer; beat on medium speed for 3 to 4 minutes, until light and fluffy. Add the egg, lemon zest, and lemon and vanilla extracts.
  • Combine the flour, baking powder and salt on a sheet of wax paper. Reduce the mixer speed to low and add the dry ingredients, mixing just until combined. Use well-floured hands to form the dough into a compact log 1 1/2 inches in diameter. Wrap in plastic wrap and refrigerate for 30 to 60 minutes.
  • When ready to bake, preheat the oven to 350 degrees. Line 2 large baking sheets with parchment paper.
  • Carefully cut the dough into 1/4-inch-thick slices, turning the log slightly every few cuts to ensure even, round slices. Place the rounds 1 inch apart on the baking sheets. Bake for 9 to 11 minutes, until the cookie edges are golden. Cool for 1 minute on the sheets, then transfer the cookies to a wire rack to cool completely. Keep the parchment paper on the baking sheets.
  • While the cookies are cooling, make the glaze: Melt the chocolate in a small metal bowl suspended over a saucepan of very hot water over medium heat, stirring occasionally until smooth. Add the melted butter and continue stirring to mix well. Remove from the heat.

Steps:

  • Preheat oven to 350-degrees F.
  • Grease baking sheets.
  • In a large bowl cream butter and sugar together until light.
  • Stir in eggs, juice from orange and grated rind from orange.
  • Stir in flour, salt, baking soda to combine.
  • Stir in nuts, if using.
  • Drop dough by spoonfuls onto prepared baking sheets.
  • Bake for 10 minutes or until golden.
  • Cool on rack while making icing.
  • To make icing blend the remaining ingredients together (powdered sugar - orange peel) until smooth and then swirl icing over cookies, covering cookies completely.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease or line baking sheets with parchment paper.
  • Beat the shortening, white sugar and eggs together until light and fluffy. Beat in the buttermilk, orange juice and grated orange zest.
  • Combine the flour, baking powder, salt and baking soda. Stir the flour into the shortening mixture and mix until combined. Drop rounded tablespoonfuls of dough 2 inches apart onto the prepared baking sheets.
  • Bake at 350 degrees F (175 degrees C) for 10 minutes. While still warm spread with orange icing.
  • To Make Orange Icing: Combine the butter or margarine, confectioners' sugar and orange juice concentrate and beat until smooth. Add more orange juice concentrate if necessary to reach the desired consistency.

Found this gem in Cooking Light magazine. This makes a nice cookie for a Christmas tray, an Easter basket or a summer picnic basket. The flavors are unique and light and you won't want to miss out on the icing as that takes the cookie over the top. Feel free to swap the orange juice and orange rind out with lemon for another great treat. I've done it both ways but my family loves the orange ones better as it is just a bit unique.

Steps:

  • Preheat oven to 350°F Prepare baking sheets by coating with non-stick spray.
  • Beat together sugar, butter and orange rind with a mixer at medium speed until light and fluffy.
  • Add honey, orange extract, egg and beat until well blended.
  • In a separate bowl, combine the flour, baking powder, and salt, stirring well with a whisk.
  • Add flour mixture to the sugar mixture alternately with the yogurt, beginning and ending with the flour mixture.
  • Drop by level tablespoons (or medium cookie scoop) onto the prepared baking sheets.
  • Bake at 350F for 12 minutes or until lightly browned. Put on a wire rack but don't let cool completely before icing.
  • For icing - combine powdered sugar and juice in a small bowl, stir with a whisk. Brush icing evenly over warm cookies. Sprinkle with bits of the grated orange rind. Cool completely on wire racks before storing.
