Glazed Salmon for Two image

Steps:

  • Place salmon in a greased 8-in. square baking dish; sprinkle with salt and pepper. Combine the remaining ingredients; spoon over fillets. , Bake, uncovered, at 400° for 10-15 minutes or until fish flakes easily with a fork.

2 salmon fillets (6 ounces each)
1/8 teaspoon salt
Dash pepper
1 tablespoon brown sugar
1 tablespoon lemon juice
1 tablespoon Dijon mustard
1/2 teaspoon ground cumin

Orange Glazed Salmon image

Steps:

  • Place oven rack in center of oven. Preheat broiler to high. In a small skillet over medium-high heat, stir together orange juice, brown sugar and garlic. Bring to a boil and cook until thickened and glossy, 4-5 minutes. Cool to room temperature; stir in sauce.
  • Arrange fish on a broiling pan on a rack over a rimmed baking sheet. Sprinkle with salt and pepper. Brush liberally with some of the sauce. Broil, basting twice with sauce, until fish flakes easily with a fork, 8-10 minutes. Garnish with green onions.

1/2 cup pulp-free orange juice
1/4 cup lightly packed brown sugar
1 small garlic clove, minced
1/2 tablespoon louisiana hot sauce
4 boneless salmon fillets, about 5 oz each
3/4 teaspoon salt
3/4 teaspoon pepper
1 green onion, thinly sliced

Steps:

  • Rinse salmon fillet under cold water and pat dry with paper towels. Cut into 6 serving portions and place salmon fillets in a large zip-top bag; set aside.
  • In a small bowl stir together remaining ingredients. Pour into zip-top bag. Squeeze air from bag and seal. Marinate in refrigerator for 1 to 2 hours.
  • Remove salmon from refrigerator 30 minutes before cooking, and bring to room temperature.
  • Light broiler and line baking sheet or broiler pan with aluminum foil.
  • Remove salmon from marinade and place on baking sheet. Discard marinade. Broil salmon 6 to 8 inches from heat source for 6 to 8 minutes or until cooked through. Do not overcook.
  • Serve immediately.

1/2 cup orange juice
1 tablespoon Dijon mustard
1 teaspoon ginger
2 teaspoons salt free citrus-herb seasoning

Steps:

  • Whisk soy sauce, orange juice, honey, ginger, vinegar and sesame oil in small mixing bowl. Set aside.
  • Season salmon with salt and pepper. Heat olive oil in medium nonstick skillet over high heat. Arrange salmon, skin side up, in skillet; brush with glaze. Cook 4 minutes, then turn. Brush tops with glaze; cook 4 minutes more.
  • Remove pan from heat; cover and set aside (fish will continue to cook). Place remaining glaze in small saucepan over medium heat. Simmer and stir until glaze is warm. Spoon glaze over salmon.
