ORANGE COCONUT PIE - 2003 1ST PLACE CITRUS

Orange Coconut Pie - 2003 1st Place Citrus image

Steps:

  • Pie Crust:
  • Chill all ingredients, including the flour and vinegar. Combine the flour, salt and sugar. Cut in shortening with a pastry blender until the mixture resembles cornmeal. In another bowl, mix water and vinegar with the beaten egg. Add the liquid mixture, 1 tablespoon at a time, to the flour mixture, tossing with a fork to form a soft dough.
  • Filling:
  • In saucepan combine sugar, cornstarch, and salt. Gradually stir in water. Cook and stir until thickened and bubbly. Reduce heat, cook and stir 2 minutes more. Remove from heat. Gradually stir 1 cup hot mixture into yolks. Return mixture to saucepan, bring to a gentle boil. Cook and stir 2 minutes more. Remove from stove. Stir in butter, orange peel and orange juice.
  • Turn into pastry shell. Refrigerate.
  • Meanwhile prepare next layer by combining cream cheese and powdered sugar until well blended. Beat in the whipped topping until light and fluffy. Spread over orange filling.
  • Top with whipped topping and sprinkle with shredded coconut as desired. Chill until serving.

Steps:

  • Heat oven to 450°F. Prepare pie crust according to package directions for ONE-CRUST BAKED SHELL using 9-inch pie pan. Bake at 450°F. for 9 to 11 minutes or until light golden brown. Cool completely.In medium saucepan, combine sugar and cornstarch mix well. Stir in water, orange juice, margarine, orange peel and egg yolks. Cook over medium heat about 5 minutes or until mixture thickens and boils, stirring constantly. Cover surface with plastic wrap. Refrigerate until just cool, about 1 hour. Stir in112 cup toasted coconut and sour cream. Fold in whipped cream. Spoon into cooled baked shell.In small bowl, beat 1/2 cup whipping cream and powdered sugar until stiff peaks form. Spread over filling. Garnish with 1/4 cup toasted coconut and almonds. Refrigerate 1 to 2 hours. Store in refrigerator.TIPS:*To toast coconut, spread on cookie sheet bake at 375°F. for about 5 minutes or until light golden brown, stirring occasionally. Or spread in thin layer in microwave-safe pie pan. Microwave on MEDIUM for 5 to 8 minutes or until light golden brown, tossing with fork after each minute.**To toast almonds, spread on cookie sheet bake at 350°F. for 5 to 10 minutes or until light golden brown, stirring occasionally. Steps:

  • In a medium saucepan, combine sugar, flour and salt over a medium heat; gradually stir in milk. Cook and stir over medium heat until the mixture is thick and bubbly. Reduce heat to low and cook 2 minutes more. Remove the pan from heat.
  • Place a strainer over a clean mixing bowl; set aside.
  • Beat the egg yolks slightly. Gradually pour 1 cup of the hot custard mixture into yolks, whisking constantly. Return the egg mixture to the saucepan and bring the entire mixture to a gentle boil. Cook and stir 2 minutes before removing the pan from heat. Immediately pour custard through the strainer.
  • Stir butter, vanilla, and coconut into the hot mixture. Pour the hot filling into the baked pie crust. Cool and refrigerate until set, about 4 hours.
