Orange Surprise Sweet Bread image

Steps:

  • 1. 1. Heat oven to 350 degrees. Generously grease a 9x5 loaf pan with shortening. Dust to coat with corn flake crumbs. Set aside
  • 2. Cut off a sliver of the rind at the nub and the blossom end of the orange. Cut the orange into 8 pieces, removing any seeds. Place in a food processor fitted with the steel blade. Add the orange juice and pulse until the orange is finely chopped.
  • 3. In a mixing bowl, cream the sugar and butter.
  • 4. Beat in the orange puree, egg, milk, baking soda, baking powder and salt.
  • 5. Stir in the flour.
  • 6. Fold in the raisins.
  • 7. Scoop the batter by the spoonful into the prepared pan. Use the back of the spoon to level the batter.
  • 8. Bake for 1 hour or until baked through.
  • 9. Cool in the pan until the sides shrink away. Remove to a wire rack and continue cooling to room temperature.
  • 10. Serve slices just as they are or with a smear of cream cheese or butter.

Steps:

  • Preheat the oven to 350 degrees F. In a large mixing bowl, cream the butter and both sugars together with an electric mixer. Beat in the eggs, one at a time, then mix in the orange juice, vanilla, and orange zest. Add the flour, baking powder, salt, orange zest, and vanilla and mix together well. Generously butter and flour a 10 inch bundt pan and scoop the batter into it, smoothing the top with a spatula. Bake for 30 to 35 minutes, or until the sides shrink away from the pan and the center of the loaf springs back. Cool the pan on a rack for 10 minutes, then turn out onto a round platter. Sprinkle a little confectioners sugar over the top of the bread and serve warm or at room temperature, accompanied by small pots of cranberry butter.

Steps:

  • Mix together crackers, butter and sugar.
  • Press in a 13x9-inch baking dish. (Save a little bit of the crumbs for top).
  • Refrigerate this while making rest of recipe so it becomes firm.
  • Fold the rest of ingredients together.
  • Spread over crumbs in dish.
  • Top with remaining crumbs.
  • Refrigerate until ready to serve.

60 Ritz crackers, rolled fine
1/3 cup butter, melted
1/4 cup sugar
1 (8 ounce) Cool Whip
1 (6 ounce) frozen orange juice, slightly thawed
2 (11 ounce) cans mandarin oranges, drained
1 (15 ounce) can eagle brand sweetened condensed milk

  • Peel orange (save fruit for another use). Place the peel in a small saucepan and cover with water; cook over medium-high heat for 5 minutes. Drain. Cover peel again with water and cook for 3 minutes; drain. Finely chop peel; set aside. , In a bowl, combine flour, sugar, baking powder and salt. Combine egg and milk; stir into dry ingredients just until combined. Fold in nuts and orange peel. Pour batter into three greased and floured 5-3/4x3x2-in. loaf pans. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pans to a wire rack.

Steps:

  • Cream the butter with the sugar in a large bowl.
  • Beat the eggs and add to the creamed mixture.
  • Sift the flour, baking powder, and salt together.
  • Mix the orange juice and milk.
  • Add the liquids alternately with the sifted dry ingredients to the creamed mixture, a little at a time, beating well after each addition.
  • Stir the lemon and orange zest into the batter.
  • Butter a loaf pan 11x4x3 inches.
  • Line the bottom of the pan with waxed paper and butter the paper.
  • Smooth the batter over the waxed paper and bake in an oven preheated to 325 degrees for 45 minutes, or until the bread springs back lightly when touched in the center.
  • Combine the lemon and orange juice with the sugar in a small saucepan.
  • Cook over medium heat until the sugar dissolves, stirring constantly.
  • Brush the bread with this icing as soon as it is taken from the oven.
  • Cool in the pan.

  • In large bowl, mix flour, baking powder, soda, and salt. In another bowl, mix 1/4 cup OJ (juice of 1 orange), yogurt and vanilla. Add flour and yogurt mixtures alternately to mixer in 3 additions.
  • Pour into two greased loaf pans. I line my pans with parchment paper on the bottom, then grease pan. Bake in a 350 degree oven for 45-55 minutes.
