OVEN-BAKED BACON
I always bake bacon in the oven! You just need to plan a bit ahead as the bacon takes longer. With baking, the bacon grease stays nice and clean and you can reuse it to saute vegetables or eggs for extra flavor.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Place bacon slices one next to the other on the prepared baking sheet.
- Bake in the preheated oven for 15 to 20 minutes. Remove from oven. Flip bacon slices with kitchen tongs and return to oven. Bake until crispy, 15 to 20 minutes more. Thinner slices will need less time, about 20 minutes total. Drain on a plate lined with paper towels.

PERFECT OVEN-COOKED BACON
This recipe differs from others in method - it produces bacon slices which are perfectly flat - better for sandwiches and some recipes which call for cooked bacon. You will not be using the 1/4 teaspoon water. Food.com will not let you upload a recipe that only has one ingredient, so I had to make up a second ingredient. I tried putting in "love" but it wouldn't let me. You should always be cooking with love, btw.

Steps:
- DO NOT pre-heat the oven.
- You will not be using the 1/4 teaspoon water. I had to add it to the ingredients list because Food.com will not let you upload a recipe that only has one ingredient, so I had to make up a second ingredient.
- Place the bacon in a single layer on a cold, rimmed baking sheet. If you like, you can line the pan with parchment paper to make clean-up easier, but I like to save my bacon grease to cook with, and the parchment makes it difficult to get it all out of the baking sheet, so I just leave the pan unlined.
- Place the pan on the center rack of a cold oven. Set the oven to 400º.
- Cook for 15 to 20 minutes. Very thin bacon will only take about 15 minutes, thick-cut bacon will take 20. After 15 minutes, keep an eye on the bacon to make sure it is not getting too brown.
- Immediately remove the bacon to a plate lined with paper towels.
- Blot the top of the bacon with paper towels to remove extra grease.
- If you like, save the bacon grease in a heat-proof container. The grease can be stored in the fridge and used later in other recipes - you just got two products for the price of one :).

Not only does this oven method free you from needing to constantly tend the bacon while it cooks, but it also produces superior results.

- Place racks in upper and lower thirds of oven; preheat to 400°F. Divide bacon between 2 wire racks set inside large foil-lined rimmed baking sheets. Bake, rotating baking sheets front to back and top to bottom halfway through, until brown and crisp, 35-50 minutes (depending on the thickness). Transfer to paper towels to drain.

- First all you need to do is take the bacon and lay it down on any of the following, cookie sheet, parchment paper (not wax paper as the wax can melt and/or the paper can catch fire), or aluminum foil. We do this for an easy clean up but if you want just lay down on your baking pan. Then sprinkle the bacon with black pepper.
- Next turn on your oven to 400 degrees fahrenheit.
- Put your bacon in and wait about 15 min to check on it then as soon as the bacon is crispy brown or golden brown take it out and you're done!

- Get the oven HOT. Preheat to 400° and line a large baking sheet with foil. (You'll be thankful once it's time to do dishes.) Test Kitchen Note: Everyone's oven is different.
- Use your cooling rack. If you like your bacon extra crispy, put a metal cooling rack inside the baking sheet. Elevating the bacon allows the strips to cook from all sides.
- Bake the bacon. Lay bacon strips in a SINGLE layer on the baking sheet. Do not let them overlap or the strips will stick together. Bake until the bacon is crispy, about 20 minutes, depending on its thickness.

- If making an amount of bacon that will fit on a single baking sheet without overlapping (about 6 to 8 slices, depending upon the bacon and sheet), place a rack in the center of your oven. If making a larger amount, place the racks in the upper and lower thirds. Preheat your oven to 400 degrees F.
- Line a large, rimmed baking sheet with foil for easy clean up (if you prefer to bake the bacon without foil, leave the foil off), then place an ovenproof baking rack on top. Spritz the baking rack lightly with nonstick spray. Arrange the bacon in a single layer on the baking rack.
- Bake until you reach your desired level of crispness. This could be as early as 12 minutes if you are using thinner bacon and like it less crisp or 20 minutes or more if you using a thicker cut and like your bacon really crispy. If baking two racks at once, rotate their positions halfway through.
- Once cooked, immediately transfer the bacon to a paper-towel-lined plate and lightly pat dry (this keeps it from getting soggy). Let cool just enough so that you don't (completely) burn your tongue. Devour immediately or use to top salads, pastas, and sandwiches, or in any of these recipes.
