OVEN FRIED SWEET POTATOES
When we first got married my husband wouldn't go near sweet potatoes. Now he asks me to specifically make these for him.

Steps:
- Cut the potatoes into thin wedges.
- Pile them in a bowl and cover them with cold water.
- Let rest 15 minutes.
- Preheat oven to 375 degrees F.
- Coat a baking sheet with vegetable spray.
- Set aside.
- Drain the potatoes and dry them with paper towels.
- Press the potatoes with paper towels to remove all water.
- Transfer the potatoes to a large bowl.
- Sprinkle the potatoes with oil, tossing the potatoes to disburse it.
- Then sprinkle with pepper, salt, paprika and cayenne pepper.
- Bake the potatoes at 375 degrees F for 20 minutes.
- Turn over the potatoes.
- Sprinkle potatoes with garlic and continue cooking for another 15-20 minutes or until crisp and brown.
- Serve immediately.
OVEN BAKED SWEET POTATO FRIES

- Mix 2 teaspoons each onion powder and garlic powder, 1 teaspoon each dried dill and kosher salt and 1/2 teaspoon pepper. Cut 3 sweet potatoes into 3/4-inch-thick wedges. Toss with 2 tablespoons vegetable oil and 1 1/2 tablespoons of the spice mixture. Roast at 450 degrees F until browned, about 50 minutes. Toss with the remaining spices. Serve with ranch dressing.

- Preheat the oven to 450 degrees.
- Halve the sweet potatoes lengthwise and cut each half into 3 long spears. Place them on a sheet pan and toss with the olive oil. Spread the potatoes in one layer. Combine the brown sugar, salt, and pepper and sprinkle on the potatoes. Bake for 15 minutes and then turn with a spatula. Bake for another 5 to 10 minutes, until lightly browned. - For fries, preheat oven to 400 degrees F.
- Lightly oil rimmed baking sheet, wiping up any excess oil with paper towel.
- Place prepared baking sheet in rack in third part of the oven. Toss sweet potatoes with vegetable oil and salt in medium bowl.

I confess, I never liked sweet potatoes, but....OMG.....I absolutely love sweet potato fries!!! Sweet and Salty and Spicy all in one bite!! The combination of the spices give a rich deep taste that's delicious. These are crispy around the edges on the outside and tender on the inside, I just love these. They are so easy to make at home and are much healthier than frying. - Preheat the oven to 450 degrees.
- 1. Cut the potatoes into 1/4″ thin strips, or to your desired thickness and length. Mix all other ingredients together in a large bowl and toss with the potatoes until they are evenly coated.
- 2. Transfer the potatoes to a large baking sheet covered with parchment paper. Spread the potatoes in a single layer. Try not to overcrowd or have multiple layers of fries - you want them to be roasted, not steamed.

- At least 30 minutes prior place sliced potatoes in bowl and cover with water.
- Preheat oven to 400°F.
- Line cookie sheet(s) with aluminum foil (makes clean-up a snap). Use two cookie sheets if necessary . . . for crisp potatoes they need lots of space, so don't crowd!
- Spray foil with non-stick spray.
- Drain potatoes and pat dry with paper towels.
- Return potatoes to (dry) bowl and drizzle with oil and toss to coat.
- Sprinkle with paprika, salt, cinnamon and brown sugar; toss to coat.

- Put the sweet potatoes in a large bowl. Add the olive oil and toss to coat. Stir together the cornstarch, paprika, garlic powder, cayenne, 3/4 teaspoon salt and a few grinds of black pepper in a small bowl. Sprinkle the spice mixture over the sweet potatoes and toss to coat.
