- Preheat oven to 425°. Place fillets on a baking sheet coated with cooking spray. In a small bowl, mix the mayonnaise, lime juice and zest, salt, onion powder and pepper. Spread mayonnaise mixture over fish. Sprinkle with bread crumbs; spritz with cooking spray., Bake until fish just begins to flake easily with a fork, 15-20 minutes. Sprinkle with cilantro.

PAN FRIED TILAPIA
Steps:
- Heat oven to 300 degrees F.
- In a shallow baking dish combine flour, seafood seasoning, salt and pepper. Add the tilapia and lightly coat each side.
- Heat oil in a large skillet over medium-high heat. Shake off any excess seasoned flour and place in the skillet. Brown on both sides, about 2 to 3 minutes per side. Place tilapia on a baking sheet that is lined with a paper grocery bag or paper towels and keep warm in the oven while you prepare the sauce.
- Turn down the heat to the pan the tilapia was cooked to low and add the butter. Once the butter is melted, add the garlic, lemon juice and parsley and saute for 2 minutes. Place the fillets on serving plates or a platter, top with the sauce and serve.

- Preheat oven to 450 degrees.
- Sift or stir flour, salt and pepper together in a shallow dish, and set aside. In a bowl, beat egg whites until white and frothy. In another bowl, combine bread crumbs with cornmeal and basil.
- To bread fillets, dip first into flour, shaking off any excess, then into egg whites, then into bread crumb mixture.
- Spray a shallow baking dish with non-stick cooking spray. Lay fillets flat in the dish, tucking under any thinner ends or edges for more even cooking.
- Bake for 10-15 minutes, or until fish flakes easily with fork.

OVEN FRIED TALAPIA
This is for the Ninja Challenge using talapia, black beans and cola.

- For talapia: Place about 3 c. of corn flakes and seasoning in food processor and reduce to coarse crumbs. Pour crumbs into bowl. Mix one egg and 1/2 c of milk together in another bowl, and put about 1-2 c. of flour in another bowl. Dip talapia in flour, then wash, then corn flake crumbs. Bake in a 400° on a baking sheet sprayed with olive oil. Spray top of fish with olive oil, bake for 15min. Flip fish over and spray with olive oil and bake another 15 min.
- Black beans: Put one half bag of black beans and one half bag of 15 bean mix in crockpot with a smoked ham hock, 1/2 c of stale coke zero, cumin and jalapeno. Full to about 2/3 full with water. Cook on low overnight.

EASY BAKED TILAPIA
Steps:
- Preheat the oven to 375 degrees F (190 degrees F). Grease a 9x13 inch baking dish.
- Place the tilapia fillets in the bottom of the baking dish and dot with butter. Season with Old Bay seasoning and garlic salt. Top each one with a slice or two of lemon. Arrange the frozen mixed vegetables around the fish, and season lightly with salt and pepper.
- Cover the dish and bake for 25 to 30 minutes in the preheated oven, until vegetables are tender and fish flakes easily with a fork.
