An easy to prepare breakfast dish that can be made the night before and baked in the morning. This can easily be made vegetarian with a few substitutions...that is what a friend of mine did.

Steps:

  • Beat eggs until foamy.
  • Stir in remaining ingredients.
  • Pour into an oiled 9" square or round pan.
  • Cover& refrigerate overnight.
  • Preheat oven to 325; remove cover and bake 50 min or until knife inserted near the center comes out clean.

  • In a medium bowl, beat eggs until foamy.
  • Stir in remaining ingredients, except corn flakes.
  • Pour into a 9 inch pie pan that has been sprayed with nonstick cooking spray or lightly greased.
  • Sprinkle with corn flakes.
  • Cover and refrigerate overnight.
  • Preheat oven to 325 degrees.
  • Bake for 50 minutes or until a knife inserted near the center comes out clean.

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Drain, reserving 2 teaspoons drippings. Stir reserved drippings into cornflakes; set aside. , In a large bowl, combine the eggs, milk, cottage cheese, cheddar cheese, onion, salt and pepper until blended. Stir in hash browns. Pour into a greased 9-in. pie plate. Sprinkle with bacon and cornflake mixture. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 325° for 40-45 minutes or until a knife inserted in the center comes out clean. Let stand for 5-10 minutes before cutting.

  • Lightly grease a 9-inch pie plate; set aside. In a medium bowl beat eggs with a fork until foamy. Stir in crumbled bacon, hash brown potatoes, Swiss cheese, cottage cheese, milk, the 1/4 cup green onions, the salt, black pepper, and hot pepper sauce. Pour into prepared pie plate. Cover and chill for 2 to 24 hours.
