OYSTER PIE

Steps:
- Preheat the oven to 375 degrees F.
- In a large saute pan or cast iron skillet add bacon and cook over low heat until rendered and crisp. Remove the bacon from the pan onto a paper towel line plate and keep the bacon fat over low heat. There should be about 1/4 cup of bacon fat left in the pan, canola oil can be added if you need more. Add the onions and the celery and cook until soft, about 2 minutes. Add the green onions, garlic, Essence, salt, and cayenne. Add the flour and cook, stirring, to make a light roux, about 3 minutes. Add the oyster liquor, cream and lemon juice, stirring constantly until the mixture thickens, 3 to 4 minutes.
- Next add the oysters and cook just until the oysters start to curl, about 2 minutes. Remove the oyster mixture from the heat and add the bacon and parsley, let cool slightly.
- Roll the dough out on a floured work surface and split into 2 equal pieces. Transfer half of the dough to a 9-inch pie pan and form into a crust and set aside.
- Pour the oyster mixture into the pie shell and cover with the other half of the rolled out dough. Crimp around the edges to seal and make slits in the top to allow steam to escape. Bake until the crust is golden brown and the filling is bubbly, about 30 minutes. Allow to cool slightly prior to serving.
- In a food processor, combine the flour, diced butter and salt. Pulse the mixture until it resembles coarse crumbs. Drizzle in the ice water and pulse until the mixture comes together. Turn the dough out of the food processor, form into a ball, wrap in plastic and refrigerate for at least 30 minutes.

OZARK PIE
This pie forms its own bottom and top crust so it is sort of like a pie/cake. Makes a fairly shallow pie so to make it higher, bake in a 9-inch pan and increase baking time 5-8 minutes.

Steps:
- Butter a 9 1/2 inch deep dish pie pan; set aside.
- In a mixing bowl, combine egg, egg yolk, sugar, and brown sugar; beat, using an electric mixer, for 2 minutes or until light and airy; blend in vanilla.
- In another bowl, sift the flour, baking powder, cinnamon, and nutmeg; stir into the batter along with the apple and nuts.
- Transfer mixture into prepared pie pan; smoothing the top to even out.
- Place pie on the center rack of a 350° oven; bake about 30 minutes or until the top is a dark golden brown and crusted over; the apples will most likely be visible through the crust.
- Place pie on a wire rack and let cool.
- Serve barely warm or at room temperature, garnished with whipped cream.

- 1 Preheat the oven to 325°F. Butter a 9-inch square baking dish.
- 2 Whisk together the flour and baking powder in a small bowl. In a large bowl, whisk the eggs and salt until blended and frothy. While whisking vigorously, slowly add the sugar and whisk until thick. Stir in the apples, pecans, and vanilla. Stir in the flour mixture, stirring well to incorporate the dry ingredients.
- 3 Scrape the batter into the prepared dish and smooth the top. Bake until the top crust is browned and the filling is bubbly around the edges, about 40 minutes. Let cool at least 10 minutes before serving hot or at room temperature with the whipped cream.
OZARK MOUNTAIN BERRY PIE

- In a large saucepan, combine sugar, cornstarch, salt and if desired, cinnamon. And water and stir until smooth; add blueberries. Bring to a boil; cook and stir until thickened, 2-3 minutes. Set aside to cool slightly. Gently fold strawberries, raspberries, blackberries and lemon juice into the blueberry mixture., Preheat oven to 400°. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add berry mixture; dot with butter. Roll remaining dough to a 1/8-in.-thick circle; cut into 1/2-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom pastry; flute edge. , Bake for 10 minutes. Reduce oven setting to 350°; bake until crust is golden brown and filling is bubbly, 45-50 minutes. Cool on a wire rack. Store in the refrigerator.

BEST EVER OZARK BAKED BEANS
This recipe comes from a lot of testing for just the right flavor. Contains sweet pickle relish! It really adds to the taste. It's an old family favorite.

- Preheat oven to 325 degrees F.
- Spray casserole dish lightly with cooking oil.
- In mixing bowl, combine beans, 1/2 cup catsup, mustard, bouillon, relish, onion, green pepper and brown sugar/molasses.
- Mix well.
- Add black pepper and Tabasco sauce to taste.
- Pour into casserole and top with remaining ketchup and bacon slices.
- Cover and bake for 50 minutes to 1 hour.
- Remove foil and increase oven to 350 degrees F.
- Bake an additional 30 minutes.
