CROCK POT PORK ROAST AND SAUERKRAUT
Throw it in the crock pot on New Year's Eve before you go out, and dinner the next day will be ready; all you have to do is fix the mashed potatoes. Slow, low cooking makes a roast that is very tender. Delicious!! I used to manage a doctor's office, and our Blue Cross rep told me that her family made this every year for New Year's.

Steps:
- Place pork roast in crock pot.
- Pour sauerkraut over pork roast.
- Sprinkle the onion soup mix and brown sugar over the pork and sauerkraut.
- Pour the water over everything.
- Cook on low for 24 hours.
- Serve over mashed potatoes.

Our children wouldn't dream of eating sauerkraut until they tasted it with this tender and juicy pork roast at a family celebration. They devoured it and went back for seconds! Now it's a mainstay in my pork recipe file.

- In a small bowl, combine the first five ingredients; rub over roast. Place roast fat side up in a Dutch oven. Combine sauerkraut and sugar if desired. Spoon sauerkraut and sausage over and around roast. , Cover and bake at 350° for 2-1/4 to 2-3/4 hours or until a thermometer reads 160°. Let stand for 15 minutes before slicing.

- brown chops or roast. Put meat in baking pan, sprinkle soup mix (I only use about 1/2 the package) and brown sugar on top.
- Put chopped onions and apples on top of meat. Add sauerkraut with juice on top. Pour apple cider vinegar over everything. Bake at 350 for 40 mins or meat is cooked. Serve with mashed potatoes.

- Preheat oven to 350 degrees.
- Rinse pork and place in large roasting pan.
- Sprinkle with salt and pepper to taste.
- Cover with 1/3 of the sauerkraut.
- Cover roasting pan and put in oven for 1 1/2 hours.
- Remove from oven and add another 1/3 of sauerkraut.
- Cover and put back in oven for another hour.
- Remove from oven and add the remaining sauerkraut.
- Cover and put back in oven for another hour.
- Remove from oven and enjoy! Mashed potatoes are a must with this dish.

PA DUTCH PONHAUS
Ok this isn't traditional. It should be made with scraps of meat because you don't waste a thing when butchering. That scrap may mean the difference between making it thru the winter or not. And why waste your work? This one is a "cleaned up" version from PBS. That or Scrapple is part of your farm breakfast. NO they are NOT the same thing. At least here. I know I grew up eating both.

Steps:
- Cook the ribs and spices for 2 hours in water to cover. Refrigerate overnight.
- Remove the grease from the top of the broth. Shred the ribs and add to the broth.
- Bring to a boil. Break up the braunsweiger and cook with the ribs.
- Slowly add cornmeal and buckwheat and whisk until smooth. Pack into a loaf pan and refrigerate overnight.
- Remove from the pan and slice. Saute until brown and serve with syrup.

- Preheat oven to 350°. In a large skillet, heat butter over medium heat; brown pork chops on both sides. Using a slotted spoon, transfer to an ungreased 13x9-in. baking dish., Combine pineapple juice, ketchup, vinegar, honey, mustard and salt; add to drippings. My mom made this for us all the time. It's just a simple, fast and tasty way to serve pork chops. Serve it with mashed potatoes. I hope you like it!

- Sprinkle pork chops with salt and pepper.
- Heal olive oil in frying pan until hot.
- Add pork chops and brown on one side.
- Flip chops and add onion.
- When browned on second side, and onion is translucent, add saurkraut and tomato soup.
- Turn down heat and simmer for about 20 minutes, turning chops over in sauce every so often.
- Serve with mashed potatoes or rice.
- Tastes even better when served the next day.

- Sprinkle pork with salt, pepper and fennel pollen or ground fennel seed. If you can't find fennel pollen, take fennel seeds and toast in a frying pan, and then grind in magic bullet or use a pestle and mortar. Use just enough to sprinkle meat to season.
- Brown on both sides. Put into the oven at 325 and bake for 30 minutes. Rinse sauerkraut in cold water and quickly drain. This removes some of the sodium and is an option.
