- Whisk salad dressing ingredients together. Taste for seasoning. Combine string beans, shrimp, tomatoes, and onions in decorative bowl. Toss with dressing and let absorb flavors for about 1/2 hour. Just before serving, toss in bacon bits and serve.

This salad is very easy to make and always requested by my family. People think they are eating something special because it is made with hearts of palm. Best if chilled overnight.

- In a medium bowl, whisk together the dressing mix, vinegar, and water until well blended. Whisk in olive oil. Add hearts of palm to the bowl, and stir to coat. Cover and refrigerate for at least one hour or overnight.
- Before serving, sprinkle the green and black olives, and bacon bits over the salad.

- In a large serving bowl, toss the spinach with hearts of palm, tomatoes, avocados, mushrooms, and almonds.

- Preheat your broiler to high. Place the corn on a baking sheet and roast under the broiler, turning every couple of minutes, until all sides are browned and even a little charred, about 6 to 8 minutes. Let the corn cool and then hold it by one end and slice down the cob with a knife to separate the kernels from the cob.
- Place the corn, tomatoes, parsley, and hearts of palm in a large bowl. Drizzle with some olive oil and season with salt and pepper and toss together. Scoop the salad into the radicchio cups and serve with lime wedges
GIGI'S QUICK LETTUCE & FRUIT SALAD
No one did it better than Gigi. She made this little salad for us all the time using different fruits - -sometimes peaches, sometimes pears. I always loved it. This recipe shows how to make it for 1 person, but it doesn't take much to increase it for however many you wish to serve.

GIGI'S CRANBERRY SUPREME SALAD
Originally from Country Cooking. My Grandma (Gigi) made this for the holidays and would garnish with fresh cranberries and lemon slices. When I make it, I use freshly made cranberry sauce, instead of store purchased cans.

Steps:
- Dissolve raspberry jello in 1 cup boiling water.
- Stir in cranberry sauce.
- Pour into an oiled 1 1/2 qt jellow mold.
- Chill until partially set.
- Dissolve lemon jello in remaining boiling water and set aside.
- Beat cream cheese and mayonnaise.
- Fold in lemon jello and pineapple.
- Chill until partially set.
- Fold whipped topping into lemon mixture and add marshmallows.
- Spread lemon mixture onto the top of the cranberry layer.
- Chill until set.

HEARTS OF PALM SALAD
Steps:
- In a bowl whisk together mayonnaise and vinegar until smooth. Cut peel and pith from tangerine and, holding fruit over a small bowl (to catch juice) cut sections free from membranes, discarding seeds.
- Rinse and drain hearts of palm and diagonally cut into 3/4-inch-thick slices. Pit and peel avocado and cut into 10inch pieces. Tear arugula into bite-size pieces and add to dressing with tangerine and juice, hearts of palm, and avocado.
- Toss salad to coat with dressing and season with salt and pepper.
