SHAKE AND BAKE CHICKEN THIGHS WITH PARMESAN PEAS

Crushed shredded-wheat cereal perked up with spices creates a super-crunchy coating reminiscent of the "Shake 'n Bake" of countless childhoods. Here, it works so well on boneless, skinless chicken thighs that you won't even miss the crispy skin. For a twist on the classic beloved side dish, buttered peas are showered with Parmesan cheese.

Steps:

  • Make the chicken: Heat oven to 450 degrees. Set a rack inside a large rimmed baking sheet. In a large resealable plastic bag, combine the crushed cereal, granulated garlic and onion, salt, pepper and oil, and mix until well blended.
  • Add half the chicken to the bag and shake, pressing gently to help coating adhere; transfer to rack. Repeat with remaining chicken. Bake for about 20 minutes until golden, crisp and cooked through.
  • Meanwhile, cook egg noodles, according to package directions. Add butter and salt, to taste.
  • While the chicken and noodles cook, make the buttered peas: In a large skillet over medium heat, melt the butter. Increase the heat to medium-high, add the peas and season with salt and pepper. Cook over moderate heat, stirring, until warmed through, about 3 minutes. Stir in the Parmesan. Serve the chicken with peas and noodles.

SHEET-PAN CHICKEN WITH CHICKPEAS, CUMIN AND TURMERIC

The yogurt marinade does two very important jobs in this sheet-pan chicken recipe. One, the acidity in the marinade helps tenderize the meat, and two, the sugars in the yogurt help brown and caramelize the skin of the chicken as it roasts. Be sure to toss the chickpeas occasionally as they roast to encourage them to get coated in the chicken fat as it renders.

Steps:

  • Season chicken parts with salt and pepper.
  • Combine 3/4 cup yogurt, 2 tablespoons lemon juice, 1 teaspoon turmeric and 2 tablespoons water in a large bowl. Season well with salt and pepper. (It should be on the salty side, as this is a marinade.) Add chicken and toss to coat evenly. Let sit at least 30 minutes at room temperature, and up to overnight in the refrigerator.
  • Place oven rack on the top third of the oven and heat to 425 degrees.
  • Combine chickpeas, fennel seed, cumin, remaining teaspoon of turmeric and half the red onion slices on a rimmed baking sheet. Drizzle with olive oil, season with salt and pepper and toss to coat.
  • Move chickpeas to the outer edges of the baking sheet. Scrape any excess marinade off the chicken, and place the chicken parts in the center. Place baking sheet in oven and bake, tossing chickpeas occasionally, until the skin of the chicken is evenly browned and the chickpeas are golden and starting to crisp, 45 to 50 minutes.
  • Meanwhile, toss remaining onion slices with 2 tablespoons lemon juice and season with salt and pepper; set aside.
  • Combine remaining yogurt with remaining 1 tablespoon lemon juice and season with salt and pepper; set aside.
  • Once chicken is ready, scatter with lemony onions and mint or cilantro. Serve with seasoned yogurt alongside as a sauce.

Steps:

  • Bone the chicken legs being careful to leave the skin on. Pat the skin side dry with a paper towel and salt liberally.
  • Meanwhile heat the oil in a large frying pan on medium heat.
  • Place the chicken pieces skin side down into the pan; now salt the top side of the chicken using remaining salt and do the same with the oregano.
  • Cook without turning for precisely 15 minutes; you will see the chicken cooking through from the bottom upwards. Dont be tempted to continue the cooking over the 15 minutes because we are now going to flip the chicken over for 2 to 3 minutes only to finish off the topside.
  • Plate with skin side down and serve with seasonal vegetables or salad.
  • Watch for the look of surprise on others faces as they take the first crispy, succulent mouthful.

  • Season the chicken. Set a large frying pan over a medium-high heat. Add the olive oil and fry the chicken skin-side down for 2 minutes or until the skin begins to colour, then turn over and reduce the heat to medium-low. Fry gently for 6 minutes, then turn over again and continue to cook for 4 minutes or until golden and cooked through. Remove and keep warm in a covered bowl.
  • While the chicken is cooking, prepare your ingredients. Remove the fat from the bacon and slice into lardons. Finely chop the garlic and slice the onions into pea-size chunks. Trim and roughly slice the lettuces.
  • Once the chicken is cooked, add the bacon to the pan. Fry briskly for 2 minutes or until it begins to colour, then reduce the heat and mix in the garlic and spring onions. Fry for a few seconds, then stir in the stock. Bring up to a full boil, scraping the pan as you do so. Allow the stock to bubble and reduce slightly, then mix in the peas and lettuce. Return to the boil, cover and simmer for 5 minutes or until the peas are tender.
  • Quickly stir the butter into the peas and remove from the heat. Adjust the seasoning to taste and serve immediately, with the chicken.

  • Add 1 1/2 tbsp oil to a large skillet. Heat on medium-high. Once oil is hot, add your chicken pieces. Season with salt, pepper, garlic powder, onion powder, and paprika. Sauté, flipping occasionally, for 3 to 4 minutes uncovered or until chicken has some browning. (If this is taking too long you may want to turn up the heat. Medium-high heat will quickly cook raw chicken pieces and you'll achieve that browning.)
  • Add ghee (or a vegan butter if dairy-free) and minced garlic to the skillet with the browned chicken. Sauté for a minute or until garlic is golden in color.
  • Reduce heat to medium. Add peas to skillet. Season with 1 tsp Italian seasoning, 1/2 tsp salt, and 1/4 tsp crushed red pepper flakes. (If you're particular heat averse you can use 1/8 tsp crushed rep pepper instead.) Stir. Sauté, stirring occasionally, for 3 to 5 minutes or until peas are cooked.

  • Pour the oil into a large stainless or cast-iron skillet over medium heat. (A non-stick skillet will work as well, although it isn't required.) Generously sprinkle the skin side of the chicken thighs with spices and then place them in the hot skillet, skin side down. Sprinkle the other side of the thighs and then, without moving them, cook uncovered* for about 20-25 minutes. Let them cook until the fat has rendered and the skin is deep golden brown and crisp; this could take as long as 30 minutes.
  • If the skin is sticking to the pan, it likely isn't finished on that side. Reduce the heat as needed if the skin starts to burn before it is evenly golden brown. Turn the thighs over and continue to cook for about 20 more minutes. When the meat closest to the bone is cooked through, the chicken is done. Enjoy!
